Epic Fish Tacos

Start with your fish marinade
- For the fish-
- 4 small filets of white fish, cut into inch wide strips.
- 1 handful of coriander (cilantro)
- 2 cloves garlic
- 1 lime (juiced)
- 6 tbsp Olive oil
- 1 large pinch of rock salt
- For the guacamole-
- 1 avocado
- 1/4 red onion
- 1/2 lime (juiced)
- 1 handful of coriander (cilantro)
- 6 cherry tomatoes
- 1 big pinch of rock salt
- For the sauce-
- 2 tbsp mayonaise
- 3 tbsp creme freche (This is effectively the same as sour cream with half the calories. Every little helps!)
- 4 tbsp hot sauce (I like my sauce pretty spicy, so if you want a cooler sauce… use less hot sauce.)
Garlic-Butter Rubbed Chicken with Roasted Oranges and Red Onions | Full Fork Ahead

Preheat oven to 450 degrees
- special equipment: cooking twine or string
- 3 garlic cloves, minced
- Coarse salt (we used coarse sea salt)
- fresh-ground pepper
- 4 tablespoons unsalted butter, softened
- 2 navel oranges, 1 zested, both cut into 2-inch wedges
- 2 teaspoons finely chopped fresh thyme, plus a few sprigs
- 1 whole chicken (4 to 4 1/2 pounds)
- 2 red onions, peeled and cut into 1 1/2-inch wedges
Macaroni Cheese Soup

Cook macaroni according to directions and drain
- 1 cup elbow macaroni
- 1/4 cup butter
- 1/2 cup carrots, chopped
- 1/2 cup celery, chopped
- 1 small onion, chopped
- 4 cups milk
- 1 1/2 cups American cheese, chopped (I think substituting white cheddar would be really good)
- 2 tablespoons chicken bouillon (I used 6 cubes)
- 1/2 teaspoon pepper
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1 can corn, drained
- 1/2 cup frozen peas
Stouffer’s Macaroni & Cheese Recipe

1.In a LARGE skillet - melt butter once melted add soup, salt, pepper, and dry mustard - stir for one minute 2
- 2 cups uncooked Elbow Pasta - cook the pasta before the 1st step
- 1/2 Stick of Unsalted butter
- 2 Cups. grated sharp cheddar cheese
- 1/2 cup sour cream
- 1 can condensed cheddar cheese soup
- Pinch of Salt
- 1/2 teaspoon of dry mustard
- 1/2 teaspoon of black pepper
- 1 Cup of Milk

With shamrock cookie cutter, cut out as many shamrocks as possible from tortillas

Quick Marinara Sauce

Preheat oven to 425°. In a medium pot, heat olive oil over medium heat
- 1 tsp olive oil
- 2 cloves garlic, smashed
- 28 oz cans crushed tomatoes (I like Tuttorosso)
- 1 small bay leaf
- 1 tsp oregano
- 2 tbsp chopped fresh basil
- salt and fresh pepper to taste

Quick Summer Fruit Salad

1. In a bowl combine the pudding mix and canned pineapple with the juice
- 1 (5.1 oz) pkg vanilla instant pudding
- 1 (20 oz) can pineapple tidbits with juice
- 1 lb. fresh strawberries, quartered
- 1 cup fresh blueberries (optional, I think marshmallows would be a yummy substitution)
- 3 bananas, sliced
