Peanut Butter Potato Candy

Combine mashed potatoes, milk, vanilla extract, and salt in a bowl
- 1/4 cup unseasoned mashed potatoes
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 1 pinch salt
- 1 (16 ounce) package confectioners' sugar
- 1 tablespoon confectioners' sugar for dusting
- 1/3 cup peanut butter, or as needed
Pizza Dip

Mix together in baking pan
- 2- 8 oz. lowfat cream cheese
- 1 16oz. lowfat sour cream
- 1 Tbsp. italian or pizza seasoning
Broccoli Raisin Salad 1

Mix salad ingredients together and then add mixed dressing ingredients over the salad
- Dressing:
- 3 heads broccoli
- 1/4 cup chopped onion
- 4 sliced bacon, cooked and crumbled
- 3/4 cup raisins
- 1 cup mayonnaise
- 2 Tbsp. sugar
- 2 Tbsp. white vinegar
Fabulous Spinach Salad

Combine the spinach, mushrooms, onion, eggs and tomatoes; toss together and sprinkle with salt
- 1 bunch fresh spinach - torn, washed
- and dried
- 10 fresh mushrooms, sliced
- 1 onion, thinly sliced
- 4 eggs, boiled and chopped
- 4 tomatoes, chopped
- sea salt to taste
- 1/3 cup olive oil
- 1/8 cup rice wine vinegar
Broccoli Casserole

- YUM, YUM, YUMMIE
- 1 (20 ounce) bag frozen broccoli cuts
- 1 (10 3/4 ounce) can cream of mushroom soup
- 1 1/2 cups cheddar cheese, grated
- 2/3 cup margarine
- 1 cup seasoned bread crumbs
Pepperoni Salad

The day before serving, separate onion sliced into rings and place in a large bowl; add pepperoni and bleu cheese
- 1 medium onion- thinly sliced
- 8 oz. pepperoni- thin sliced
- 1/4 cup crumbled bleu cheese
- 2/3 cup salad oil
- 1/3 cup cider vinegar
- salt and pepper
- 10 oz. frozen spinach, thawed, washed, dried, chopped
- 1/2 head iceberg lettuce, chopped
ZUCCHINI PIZZA CASSEROLE (from Chef Ron Lock)

Shred zucchini. Mix the zucchini with 2 eggs, parmesan cheese, 2 oz
- 4 cups shredded zucchini (about 5 small zucchini's)
- 1/2 tsp. salt
- 2 eggs
- 2 tbsp. parmesan cheese
- 2 oz. cheese (I used mozzarella and cheddar)
- 1 tsp. italian seasoning
- 1 lb. ground beef
- 2 oz. pepperoni, chopped
- 1 medium onion, chopped
- 2 cups spaghetti sauce
- 1 medium bell pepper, chopped
- 4 oz. cheddar or mozzarella cheese (or a mix of both)
Cheesy Ranch Broccoli & Cauliflower Bake

Thaw the cauliflower and broccoli
- 1 16 oz bag frozen cauliflower
- 1 16 oz bag frozen broccoli
- 1 1/2 cups shredded sharp cheddar cheese
- 2-3 tablespoons dry ranch seasoning (depends on your taste, I LOVE ranch)
- 3 tablespoons butter
LOADED CAULIFLOWER

In a large pot boil water and cook Cauliflower for 8 - 10 minutes, drain and let cool
- 1 large head of Cauliflower cut into bite size pieces (approx 6 cups)
- 6-8 strips of bacon cooked and crumbled (Cooked in oven at 400° for 20 mins)
- 6 Tbs chopped Chives
- 1/2 cup Mayonnaise
- 1/2 cup Sour Cream
- 2 cups Colby Jack Cheese ( may use cheddar)
- 8 oz container sliced mushrooms

Make dressing by combining all ingredients together and mixing well
- Dressing:
- 1 bunch broccoli – tops only
- 1 C. shredded cheddar cheese (add before serving)
- 1 small onion, chopped
- 1/2 lb bacon, fried & crumbled
- 1/2 C. mayonnaise
- 1/4 C. sugar
- 1 T. vinegar
