- Pesto:
- 2 large handfuls of basil
- 2 cloves garlic
- 1/2 cup pine-nuts
- 2 tbsp. olive oil
- salt and pepper to taste
- Remaining ingredients:
- I large zucchini
- 4 tomatoes

- 4 teaspoons toasted whole cumin seeeds
- 4 teaspoons turmeric
- 4 (1-inch) pieces of cinnamon
- 18 whole black peppercorns
- 14 whole cloves
- 2 teaspoons sugar
- 20 garlic flakes (or 4 medium cloves garlic, roughly chopped)
- 2 inch piece ginger, peeled and roughly chopped
- 1 cup of palm vinegar, or 2/3 cup rice vinegar
- 1 pound [0.5 kg] pork shoulder, cut into 1-inch [2.25 cm] cubes
- Kosher salt
- 2 medium onions, roughly chopped (about 2 cups)
- 3 tablespoons vegetable oil
- 2 cups water

Russians love to mix jams into various kashas (porridges) for breakfast
- 1/2 cup berry jam or preserves
- 1 stick [113 g] butter
- 1 cup white sugar
- 1 egg
- 1 tablespoon vanilla
- 1 1/4 cups finely ground oatmeal (I prefer quick Irish oats.)
- 1 1/4 cups flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Roased Tomatillo Salsa

1. Preheat oven to 475. Position the rack on the second-highest level from the top of the oven
- 1 lb tomatillos (about 10 to 12), soaked, husked, and dried
- 2 to 3 fresh serrano chiles, stemmed
- 1 small white onion, peeled, cut into half-inch-thick slices, and separated into rings
- 2 to 3 garlic cloves
- 2 T. olive oil
- Coarse salt and freshly ground black pepper to taste
- 1/3 c. water
- 1/4 c. coarsely chopped fresh cilantro
- Pinch of sugar to taste

- Yakhni:
- 2 - 3 lb [1 - 1.5 kg] lamb bones, cut into 2-inch or 3-inch pieces (Or 1-1.5 kg beef bones, 100 g lamb goulash)
- 1 small onion, quartered
- 1 large garlic clove, crushed
- 1 slice fresh ginger root, 1/4 in thick
- 1 cinnamon stick, 3 in long
- 8 whole cloves
- 1/2 t black peppercorns
- 1 t. salt
- Paneer:
- 1/2 gal [2 L] whole milk
- 1/4 c [60mL] vinegar
- Fries
- 2.25 lb [1 kg] potatoes Russet [kochend-mehlig]
- 1 T. vegetable oil
- 3/4 t paprika
- 1/4 t ground coriander
- 1/4 t ground cumin
- 1/4 t coarse kosher salt
- 1/8 t freshly ground black pepper
- 1/8 t sugar
- 1/8 t ground ginger
- Pinch ground cinnamon
- 2 crumbled saffron threads
