Vegan Green Goddess Dressing

•1. Add garlic clove to food processor and process until finely chopped
- 1 garlic clove
- 1 cup packed avocado flesh (2 small) (I heard Tahini might work in place of avocado, so Im trying this next!)
- 7-8 tbsp water
- 5 tbsp apple cider vinegar
- 3-4 tbsp fresh lemon juice, to taste
- 1/4 cup extra virgin olive oil
- 1/2 cup packed fresh basil leaves
- 1/2 cup packed fresh parsley
- 1/2 cup packed green onion (dark green part only, not white)
- 1 tsp kosher salt, or to taste
- Pinch of cayenne (optional)
- Sweetener, to taste (I used 1/2 tsp agave)
Cinnamon Streusel Mug Cake

zap 1 tbsp. butter for 5-10 seconds until soft
- cake part ingredients:
- 1 tbsp. butter
- 2 tbsp. sugar
- 2 tbsp. applesauce or oil
- a few drops of vanilla extract
- 1/4 cup flour
- 1/8 tsp. baking powder
- pinch of salt
- streusel ingredients:
- 1 tbsp. butter
- 2 tbsp. flour
- 1 tbsp. brown sugar
- 1/4 tsp. cinnamon
Sour Cream Noodle Bake

Preheat oven to 350 degrees
- ■1-1/4 pound Ground Chuck
- ■1 can 15-ounces Tomato Sauce
- ■1/2 teaspoons Salt
- ■Freshly Ground Black Pepper
- ■8 ounces, weight Egg Noodles
- ■1/2 cups Sour Cream
- ■8 oz cream cheese
- ■1/2 cups Sliced Green Onions (less To Taste)

- 1 whole Lime, Juiced

Spicy Potato ‘n Black Bean Burritos

•1. In a medium-sized pot, add the chopped potatoes and cover with water
- 200 grams yellow-skinned potato, not peeled and chopped into 1” pieces (about 2 small potatoes)
- 150 grams sweet potato, peeled and chopped (about 1/2 large)
- 1 tsp extra virgin olive oil
- 1 cup diced red onion
- 1 jalapeno pepper, seeded and diced
- 1 small tomato, chopped
- 1/2 tsp chili powder
- 1 tsp ground cumin
- 1 tbsp fresh lime juice
- 1 cup shredded dinosaur kale, large stems removed
- 1.5 cups cooked black beans (one 15-oz can), drained and rinsed
- Fine grain sea salt (or Herbamare) & ground pepper, to taste
