Preparation Cut bottoms off the hearts of romaine and cut the heads in half lengthwise
- Shrimp or Chicken Lettuce Wraps with Creamy Caesar Dressing
- Ingredients
- 2 hearts of romaine lettuce
- 1 pound jumbo fully cooked shrimp, from the seafood counter in market
- 1 rotisserie chicken
- 4 heaping tablespoons reduced fat mayonnaise
- 1 clove garlic, crushed
- 1 lemon, zested and juiced
- 2 tablespoons anchovy paste (optional – but the sauce really tastes better with anchovy paste. If you think you don't like anchovies, try them in this sauce. They just taste salty and yummy!)
- 1/2 cup grated Parmigiano Reggiano cheese (a few handfuls)
- 2 teaspoons Worcestershire sauce
- 1 teaspoon coarse black pepper (about 1/3 palmful)
- 3 tablespoons extra virgin olive oil (EVOO)
Sesame Chicken Salad

PreparationCombine syrup, soy and sweet hot mustard in a bowl
- Dressing:
- 3/4 cup pure maple syrup (eyeball it)
- 1/3 cup Tamari (dark soy sauce)
- 1/2 cup sweet hot mustard (eyeball it)
- 1 1/3 pounds chicken breast tenders (the average weight of one package)
- Salt and pepper
- 1/2 cup sesame seeds, a mix of black and white or all white
- 1/4 cup vegetable oil
- 1 1/2 inches fresh ginger root, grated or minced
- 3 tablespoons rice vinegar (3 generous splashes)
- 1/4 cup Chinese duck sauce or apricot all fruit spread
- 1/4 cup vegetable oil (eyeball it)
- Salad:
- 1 bag mixed baby greens (5-6 ounces)
- 1 /4 English (seedless) cucumber, halved lengthwise and then thinly sliced on an angle
- 1 /2 cup shredded carrots (a couple of handfuls)
- 4 scallions, thinly sliced on an angle
- 1/4 pound snow peas, sliced on an angle
- Fried Chinese noodles, perhaps leftover from take-out, for garnish (optional)
Vegan Whole Wheat Blueberry Breakfast Muffins

•1. Preheat oven to 375F and line a muffin tin with liners
- 1 cup non-dairy milk
- 1 tbsp apple cider vinegar
- 1/4 cup ground flax seed
- 1 and 3/4 cups whole wheat pastry flour (OR 1 cup whole wheat + 3/4 cup all-purpose flour)
- 1 & 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/4 tsp kosher salt
- 1/4 cup extra virgin olive oil (or vegetable)
- 1/2 cup pure maple syrup
- 1 tsp pure vanilla extract
- 1/2 tsp pure almond extract (optional, but awesome)
- 1 & 1/2 cup fresh + sweet blueberries (frozen blueberries seem to make the muffins too moist)
- Cinnamon Streusel topping
- 2 tbsp + 2 tsp Turbinado sugar, 1 tsp cinnamon, 2 tsp Earth Balance, 2 tsp flour, pinch salt.
Lazy Bolognese-Style Lasagna

- Lazy Bolognese-Style Lasagna

- Salt and pepper
- 1 1 1 pound wavy lasagna noodles, broken into irregular pieces
- 2 2 2 tablespoons extra virgin olive oil (EVOO)
- 1 1/2 1 1/2 1/2 pounds ground beef
- 1 1 1 onion, finely chopped
- 2-3 2-3 cloves 2-3 large cloves garlic, finely chopped
- 1 1 1 small carrot, finely chopped or grated
- 1 1 1 sprig rosemary, finely chopped
- A sprinkle of ground cloves
- 1/4 1/4 1/4 cup tomato paste
- 1 1 1 cup white wine or an additional 1 cup beef stock
- 2 2 2 cups beef stock
- 3 3 3 tablespoons butter
- 2 2 2 rounded tablespoons flour
- 2 2 2 cups whole milk
- to grated nutmeg, to taste
- Freshly grated Parmigiano Reggiano cheese
- Preparation
- to to large pot of water to a boil, salt it, add the pasta and cook to al dente.
- Pre-heat the broiler and position a rack in the center of the oven.
- to a saucepan, melt the butter over medium heat. Whisk in the flour, then the milk, and let thicken enough to coat a spoon; season with salt, pepper and nutmeg.
- to the pasta with the meat sauce and arrange in a casserole. Pour the bechamel sauce over the top in an even layer. Top with a layer of Parmigiano Reggiano and broil in the oven to brown the top.

- The Blue Cheese Ball
- 1 cup pepper jack cheese
- 4 ounces (1/2 package) cream cheese
- 3 tablespoons salsa, any kind you like
- 1 tablespoon cilantro or parsley, chopped
- Zest of 1 lime
- 1 cup blue tortilla chips, crushed
- combine all ingredients in a food processor (except chips)
