Toasted Coconut and White Chocolate Chip Cookies

This quickly became a family favorite
- 1/2 cup unsalted butter, at room temperature
- 1/2 cup sugar
- 1 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/4 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup toasted coconut*
- 1 cup white chocolate chips
Restaurant Style Chicken Nachos

Preheat oven to 350 degrees F (175 degrees C)
- 2 cloves garlic, crushed
- 6 green onions, sliced, white parts and tops separated
- 3 tablespoons canola oil
- 1 shredded, cooked, whole chicken breast
- salt and pepper to taste
- 1 cup salsa
- 1/2 (12 ounce) package tortilla chips 1 (8 ounce) package shredded Cheddar/Monterey Jack cheese blend
- 1/2 large tomato, diced (or salsa)
Chicken Spaghetti Bolognese

In a medium pot, heat the oil over a medium-high heat
- 1 pound of ground chicken
- 1 pound uncooked multigrain spaghetti
- 2 tablespoons extra-virgin olive oil
- 1/2 onion, finely chopped
- 3 garlic cloves, finely chopped
- 1/2 celery stalk, finely chopped
- 1 medium sized carrot, peeled and finely chopped
- 1 (28-ounce) can crushed tomatoes
- 1/2 cup white wine
- 1 cup Progresso® Low Sodium chicken broth
- 2 tablespoons fresh basil or 1 teaspoon dried basil
- 1 teaspoon sugar
- Salt and freshly ground black pepper
- 1/3 cup fat free half-and-half
- 1/4 cup shredded Parmesan cheese
Rocky Road Pie

Heat oven to 350 degrees. Grease and dust a 9-in pie plate with sugar
- chocolate glaze:
- 1 package chocolate fudge cake mix
- 2/3 cup water
- 3 tablespoons vegetable oil
- 2 eggs
- 1 - 3/4 cups chilled whipping cream
- 2/3 cup miniature marshmallows
- 2/3 cup coarsely chopped walnuts
- 1/2 cup semisweet chocolate chips
- 1 Tbsp. whipping cream
- 1 tsp. butter
- 1 oz. coarsely chopped chocolate chips
Chocolate Buttercream Frosting

Put the chopped chocolate in a small heat proof bowl
- 6 ounces semi-sweet chocolate, chopped
- 1/2 cup heavy cream
- 1/2 cup butter
- 1/2 cup butter flavored shortening
- 5 cups powdered sugar
- 2-5 tablespoons milk
Simmered Italian Rice

Heat broth and Italian seasoning in 2-qt saucepan over medium-high heat to a boil
- 1 3/4 c. chicken broth
- 1 tsp. Italian seasoning, crushed
- 3/4 c. uncooked regular long-grain white rice
- 1 c. chopped spinach
- 1/2 c. grated parmesan cheese
Chocolate Chip Cookie Delight

Let cookie dough stand at room temperature for 5-10 minutes to soften
- 1 tube (16-1/2 ounces) refrigerated chocolate chip cookie dough
- 1 package (8 ounces) cream cheese, softened
- 1 cup confectioners' sugar
- 1 carton (12 ounces) frozen whipped topping, thawed, divided
- 3 cups cold milk
- 1 package (3.9 ounces) instant chocolate pudding mix
- 1 package (3.4 ounces) instant vanilla pudding mix
- Chopped nuts and chocolate curls, optional
Chocolate Chip Cookie Dough Dip

In a small saucepan, melt the butter with the brown sugar over medium heat
- 1/2 cup butter
- 1/3 cup brown sugar
- 1 teaspoon vanilla extract
- 1 (8 ounce) package cream cheese
- 1/2 cup confectioners' sugar
- 3/4 cup semisweet mini chocolate chips
