Chocolate Coconut Milk Cake

Preheat your oven to 350F
- Chocolate Cake:
- 2 oz (56g) semisweet chocolate, chopped fine
- 3/4 c (67g) unsweetened cocoa powder
- 1 tsp instant coffee, optional (it brings out the chocolate taste a little)
- 3/4 c (177ml) boiling water
- 1 c (237ml) coconut milk
- 1 1/4 c (177g) all-purpose flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 6 Tbsp (85g) butter, melted
- 1 1/2 c (298g) sugar
- 2 eggs, room temp
- Coconut Buttercream
- 5 egg whites
- 1 c (200g) sugar
- 1 c (266g) butter, room temp
- 1/2 tsp coconut extract (or more, to taste)
- Toasted coconut, if desired
Stuffed Sweet Potatoes

1. Preheat oven to 400 degrees
- 6 sweet potatoes (you want shorter and fatter rather than long and skinny sweet potatoes)
- 2/3 cup butter, at room temperature
- 2/3 cup light brown sugar
- 2/3 cup flour
- 1/8 tsp. ground cinnamon
- 1/8 tsp. salt
- 3/4 cup miniature marshmallows
- 1/2 cup pecan pieces
Triple-Fudge Cake

Here's a rich and homey chocolate cake that travels well
- 1/3 cup sweetened condensed milk (not evaporated)
- 1 cup semisweet chocolate chips (6 oz)
- 1 box Betty Crocker® SuperMoist® chocolate fudge cake mix
- 1/2 cup vegetable oil
- 1 cup applesauce
- 2 eggs
- 1/2 cup chopped pecans

EZ Yeast Rolls

Pour boiling water over sugar, salt, and shortening
- 11/2 cups boiling water
- 1/2 cup sugar
- 1 tsp salt
- 1 pkg dry yeast
- 1/2 cup lukewarm water
- 5 1/2 cups flour
Milky Way Tart

Place the chopped chocolate (or chocolate chips) in a medium heatproof bowl
- For the milk chocolate mousse:
- 5 ounces milk chocolate, chopped (I used Ghiradelli chips and it was fine)
- 2 cups (1 pint) heavy cream
- 1 teaspoon instant espresso powder
- 1/8 teaspoon kosher salt
- For the caramel filling:
- 3/4 cup granulated sugar
- 1/3 cup water
- 1 tablespoon corn syrup (optional--see note)
- 3/4 cup heavy cream
- 2 tablespoons unsalted butter
- 1/4 teaspoon kosher salt
- 2 teaspoons vanilla extract
- For the tart assembly:
- One baked and cooled 9-inch tart shell (like My Favorite Pie Crust)
- 3 -to 4-inch slab milk chocolate, at warm room temperature, for decorating

- 1 cup extra long grain rice or basmati rice

Chicken Tenders with Honey Mustard Sauce

Whisk together milk and egg in a bowl
- Honey Mustard Sauce:
- 1 to 2 pounds boneless, skinless breast strips
- 1 cup all-purpose flour
- 3/4 cups oil
- 1 egg
- 3/4 cups milk
- 1 teaspoon thyme
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- Pinch of cayenne (Optional)
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 3/4 cup mayonnaise
