Roasted Pork Loin with Cider and Chunky Applesauce

Preheat the oven to 425 degrees F
- 2 sprigs rosemary leaves, roughly chopped
- 2 sprigs sage, roughly chopped
- 2 cloves garlic, smashed
- Pinch crushed red pepper
- Salt
- Extra-virgin olive oil
- 1 (6-chop) pork rib roast
- 2 large onions, sliced
- 1 bundle thyme, tied with string
- 3 bay leaves
- 2 quarts apple cider
- Chunky Applesauce, recipe follows
- 3 tablespoons butter
- 4 Granny Smith apples, peeled, cored and cut into 1/2-inch chunks (toss the apples in lemon juice if not using right away)
- 1 1/2 cups of the reserved cider from the Roasted Pork Loin with Cider
- 1/4 cup apple cider
- 1 pinch ground cinnamon
- 1/4 cup heavy cream
- 1/2 cup walnuts, toasted and coarsely chopped

- Brining Turkey:
- 1 brining bag
- 1 gallon vegetable broth
- 1 gallon apple juice
- 1 cup sea salt
- 2 tablespoon crushed dried rosemary
- 2 tablespoon dried sage
- 2 tablespoon dried thyme
- 2 tablespoon dried savory
- 1 gallon ice water
- For a 15-20 lb turkey
- Baking turkey:
- 2 cups kosher salt
- 1/2 cup butter, melted, divided
- 4 carrots (chunked)
- 4 celery stalks (chunked)
- 1 onion (chunked)
- 1 cup dry white wine
- 2 sprigs fresh thyme
- 1 bay leaf

Mexican Quinoa (Vegan)

Heat some oil in a large pot or pan and sauté the onion for 2-3 minutes or until it becomes translucent
- 1 small red onion, chopped
- 3 cloves of garlic, minced
- 2 bell peppers, chopped (I used an orange and a red one)
- 1 cup quinoa
- 1 1/2 cup vegetable broth
- 3 cups canned diced tomatoes
- 1 15 oz can black beans
- 2 cups frozen corn
- 1 tablespoon paprika powder
- 1/2 tablespoon cumin
- juice of one lime
- 2 green onions
- 1 cup fresh parsley, chopped
- salt, to taste
- black pepper, to taste
- red pepper flakes
- 1 avocado, to serve
Balsamic Herb Chicken

Heat olive oil in a medium skillet with lid
- * 6 Each Tyson Chicken Breasts
- * Salt and Freshly Ground Pepper, to taste
- * 2 Cloves Garlic, crushed

- * 1 Onion, thinly sliced
- * 1 Can Diced Tomatoes, 14.5 oz.
- * 1/2 Cup Balsamic Vinegar
- * 1 Tablespoon Fresh Basil, chopped
- * 1 Tablespoon Oregano, dried
- * 1 Tablespoon Fresh Rosemary
- * 1 1/2 Teaspoons Fresh Thyme, minced
Coconut Red Curry Sauce and Noodles

- 1 tablespoon canola oil
- 1/2 cup stemmed and sliced shiitake mushrooms
- One 1-inch piece fresh ginger, grated
- 1 small shallot, finely diced
- 1 tablespoon red curry paste
- One 15-ounce can unsweetened coconut milk, stirred
- 1 cup napa cabbage, chiffonade
- 2 medium carrots, julienned
- 1/2 block extra-firm tofu, large dice
- 1/2 tablespoon honey
- 3 scallions, green parts only, sliced on a bias
- Juice of 1/2 fresh lime
- Chopped fresh cilantro, for garnish
- Kosher salt and freshly ground black pepper
- 1 pound fresh noodles, cooked al dente
