- 7 tablespoons espresso or strong instant coffee

- 4 savoiardi cookies ( ladyfingers)

CHICKEN PROVENCAL

- 2 medium carrots, peeled
- 2 cloves garlic, chopped
- 2 tablespoons extra virgin olive oil (EVOO)
- 1 medium zucchini
- 1 small to medium red bell pepper, seeded
- 1 medium yellow skinned onion, peeled and halved
- Salt and pepper
- 1 tablespoon herbes de Provence, available on spice aisle or, 1 teaspoon each dried sage, rosemary and thyme
- 1 1/2 pounds small red skinned potatoes
- 1 cup dry white wine
- 1 (can diced tomatoes (14 ounces) or coarsely ground tomatoes
- 1 quart plus 1 cup chicken stock, available in quart and 1 cup paper box containers on the soup aisle
- 1 pound chicken tenders, diced
- 1 small jar black olive tapenade (4 ounces) found with Italian foods or on condiment aisle
- 2 tablespoons chopped flat leaf parsley
- Crusty bread, to pass at table
Sausage Broccoli Stir-Fry

In a large skillet, heat oil over medium-high heat
- 2 tablespoons canola oil
- 1 package (13.5 ounce) JOHNSONVILLE® Premium Fully Cooked Smoked Sausage Rope, cut into coins
- 1 tablespoon ginger, finely chopped
- 2 cloves garlic, minced
- 4 cups fresh broccoli florets or mixed frozen veggies
- 1/4 cup water
- 3 to 4 tablespoons teriyaki, oyster, or plum sauce
- hot cooked rice
- 1/2 cup cashew halves, if desired

- 1 ⁄2 cup sugar
- 1 ⁄2 teaspoon cinnamon
- FOR FROSTING
- 1 ⁄4 cup butter
- 2 1⁄2 ounces softened cream cheese
- 1 teaspoon vanilla or 1⁄2 teaspoon maple flavoring
- 2 cups powdered sugar
- FOR CARAMEL TOPPING
- 3 ⁄4 cup sugar
- 1 ⁄4 cup margarine
- 2 tablespoons water
