Easy Microwave Fudge

Pour condensed milk and milk chocolate chips into large glass mixing bowl
- 1 Can of Condensed Milk (14 oz)
- 3 Cups of Milk Chocolate Chips
- 8 ×8 baking tin
Lamb Shoulder Chops with Red Wine

Put a 10-inch straight-sided saute pan over medium heat for 5 minutes
- 2 teaspoons vegetable oil
- 4 (8 to 12-ounce) lamb shoulder blade chops
- 16 ounces red wine blend, plus 1 tablespoon (recommended: Syrah, Grenache or Mourvedre)
- 4 large sprigs fresh rosemary, plus 1 teaspoon chopped leaves
- 3 ounces dried plums, finely chopped
- 3 ounces dried apricots, finely chopped
- 2 tablespoons unsalted butter, chilled and cut into several small pieces
- Kosher salt
- Freshly ground black pepper
Bourbon Grilled Tuna

Combine all ingredients, except tuna, in a small bowl
- 6 tuna steaks, about 1 inch
- 1/3 cup hoisin sauce
- 3 tablespoons bourbon
- 2 tablespoons honey
- 2 teaspoons fresh ginger, grated
- 2 teaspoons lime juice
- 2 cloves garlic minced
- 1 teaspoon chili sauce
- 1/2 teaspoons salt
- 1/2 teaspoon black pepper
KFC Coleslaw (Copycat)

In a large bowl add the cabbage, carrot, onion
- 8 cups diced cabbage (I used a food processor shredding disc)
- 1 carrot (also used the food processor)
- 2 tablespoons grated onions
- 1 /3 cup sugar
- 1 /2 teaspoon salt
- 1 /8 teaspoon white pepper
- 1 /4 cup whole milk
- 1 /2 cup mayonnaise
- 1 /4 cup buttermilk (I used buttermilk powder to make mine)
- 2 tablespoons white vinegar
- 3 tablespoons lemon juice
Garlic Seafood Quesadillas

If not already shredded, thinly slice the cheese
- 1 pkg imitation crab sticks or pieces, or imitation lobster pieces
- 8 oz pkg cheese – brie, part-skim mozzarella, fresh mozzarella, or Monterey jack
- 4 whole wheat tortillas
- 1-2 heads roasted garlic
- 1-2 T olive oil
- Salsa of your choice
- Lite sour cream
- Optional: finely minced onion, thinly sliced mushrooms, chopped cilantro, seeded diced tomato, finely minced jalapeno
Extra Light and Fluffy Buttermilk Pancakes

This is a combination of a couple of recipes
- 1 cup all purpose flour (1/2 c)
- 1 tablespoon sugar (1/2 T)
- 1/2 tablespoon baking powder (3/4 t)
- 1/2 teaspoon baking soda (1/4 t)
- 1/8 teaspoon salt (pinch)
- 3/4 cup well shaken buttermilk (more or less) (3/8 c)
- 2 large eggs (separated, if you wish) (1)
- 4 tablespoons melted butter (2 T)
Karen's "Creamed Corn"

Bring cream to a slow boil
- 1/4 c heavy cream
- 1/2 t sugar
- 1/4 t salt (Kosher)
- 1 t instant polenta
- 1 large pat butter
- 1/8 c parmesan cheese
- 1 generous kitchen spoon mascarpone cheese
- small amount finely chopped rosemary
- 1 shake white pepper
- 1 small can corn kernels (not creamed)

Spray a 9x5 inch loaf pan with baking spray
- 1 ½ cups flour
- 2 ½ t baking powder
- 1 t salt
- 1 stick butter (it’s not pound cake without butter)
- ¼ cup low-fat plain yogurt
- 1 ½ cups low-fat ricotta cheese
- 1 cup measurable Splenda
- ½ cup sugar
- ¾ cup egg substitute or 3 large eggs
- 1 t vanilla extract
- 2 T fresh lemon juice – optional
- Zest from lemon – optional
- 6 oz fresh blueberries or blackberries – optional
