Bobby Flay's (Shark Restaurant) Fried Chicken

I have adjusted this recipe to that shown on the Kentucky Derby pre-show, 2019
- Reduce quantities (1/2?) for small amount of thighs.
- 1 quart buttermilk, plus 2 cups
- Kosher salt and freshly ground pepper
- 2 teaspoons chile de arbol powder, or 2 tablespoons hot sauce, plus 2 teaspoons chile de arbol powder, or cayenne pepper
- BS chicken thighs
- 4 cups all-purpose flour
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon sweet paprika
- panko crumbs
- Peanut oil, for deep-frying
Budweiser Cranberry BBQ Meatballs

Makes about 48 meatballs [Cook’s Note: May also use 2 pounds thawed frozen premade meatballs
- 1 cup ketchup
- 1 cup whole berry cranberry sauce
- 3 /4 cup Budweiser Amber Lager
- 1 /4 cup apple cider vinegar
- 1 /2 cup dark brown sugar, packed
- 3 tablespoons molasses
- 1 tablespoon yellow mustard
- 1 teaspoon kosher salt
- 1 teaspoon red pepper flakes, or more (optional)
- 1 pounds lean ground beef
- 3 /4 cup bread crumbs
- 1 teaspoon garlic powder
- 2 envelopes onion soup mix
- 2 tablespoons chopped fresh parsley
- 2 eggs
- Splash of milk
- 1 tablespoon vegetable oil, for frying
French Vinaigrette

use this for French meals
- 1/8 teaspoon sea salt
- 1 tablespoon sherry or red wine vinegar (or Champagne vinegar)
- 1/2 small shallot, peeled and minced (about 1 tablespoon)
- 1/2 teaspoon Dijon mustard
- garlic - microplaned
- 3 T to 4T (45 ml to 60 ml) olive oil
- fresh herbs, if desired (thyme)
Raspberry Silk Pie

This is my invention for the annual Corvette Chocolate cook-off
- Crust:
- 1/2 c melted butter
- 2 T sugar
- 1/4 c flour
- 2 c finely crushed chocolate graham crackers
- 1/4 c pecan halves
- Fillings:
- 1 c black raspberry jam
- 3 eggs, room temp
- 1 1/2 c whipping cream, room temp
- 3/4 c sugar
- 1/2 c cocoa powder (Droste?)
- 1 t vanilla
- 1 pinch salt
- 1 c red raspberry jam
- 3 eggs, room temp
- 1 1/2 c whipping cream, room temp
- 3/4 c sugar
- 3 oz white chocolate, melted

Roasted Branzino with Lemons (Red Snapper)

Oven roasted red snapper Try this with Tilapia?
- 2 teaspoons olive oil
- 8 ounces pancetta, diced into 1/4-inch pieces
- Vegetable oil cooking spray
- 2 (1 1/2-pound) whole branzino (or striped bass or red snapper), cleaned, heads removed and filleted
- Kosher salt and freshly ground black pepper
- 2 lemons, zested
- 1/4 cup roughly chopped fennel fronds
- 2 tablespoons chopped fresh thyme leaves
- 2 lemons, thinly sliced
- 1 medium bulb fennel, thinly sliced
- 1/2 cup white wine
- 2 tablespoons chopped fresh flat-leaf parsley
Fruit Salsa

- 1 – 2 cups fruit of your choice, chopped: fresh pineapple, plums, peaches, mango, or papaya
- ¼ - ½ cup chopped red onion
- ½ jalapeno, seeded, finely minced – optional
- ½ bunch cilantro – leaves chopped
- Salt
- Cider or red vinegar, as needed
- Splenda measurable sweetener

According to the package instructions, prepare the desired amount of pasta – any shape you wish
- This is sooo simple!!!
- Whole wheat pasta
- 1-2 Tblspn olive oil
- 1 tsp lemon zest
- Salt
- Pepper
- ¼ cup pasta cooking water
- Fresh basil, chiffonade
- ¼ cup shredded Parmesan cheese
Salt Roasted Prime Ribs of Beef

- 12 cups coarse salt
- 3 cups water
- 3 cups all-purpose flour
- 3 egg whites, lightly whisked
- 8 to 10 pound prime rib roast

Fish Chowder

I used leftover "naked-baked" cod from fish fry at Ivan's
- 1 lb cod fish fillet
- 2 tablespoons margarine or 2 tablespoons cooking oil (butter flavored olive oil)
- 1 medium onion, sliced
- 1/2 cup celery, diced
- 2 cups raw potatoes, diced
- 1/2 cup carrot, diced
- 2 cups boiling water
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup milk (skim + fat-free 1/2&1/2)
- 3 T flour
