My mom and I decided to invent a soup on Valentines Day

  • 1 1/2 C. Sweet Onion, chopped
  • 1 Tbsp. Olive Oil
  • 6 C. Water
  • 4 cubes Beef Bullion
  • 1 1/2 lbs. potatoes, scrubbed and diced with peels on, rinse potatoes (about 6 small potatoes)
  • 1 head and stem of broccoli, finely chopped
  • 1/4 C. real bacon bits
  • 2 C. Milk with 1/2 C. all-purpose four
  • 1/2 C. Sour Cream
  • Salt and pepper to taste
  • 1 to 1 1/2 lbs. cooked steak or hamburger patties, cut into bite-size chunks

  • 2 pears (I used red), peeled, halved, cored - stems intact (hopefully)
  • 1/4 c sugar
  • 1/8 c honey (not quite)
  • 1 c water

  • ½# lean ground turkey or chicken
  • ¼ cup diced onion
  • ¼ cup golden raisins

  • ¼ t cinnamon
  • 2 t Fajita seasoning
  • ¼ cup uncooked long grain brown rice, prepared according to package instructions

  • 1 -2 T flour

For sauce, put all ingredients in a mini-processor and whirl until smooth

  • Sauce:
  • 2-3 filets tilapia
  • 1 Tblspn olive oil

  • 1 Tblspn fresh flat leaf parsley, chopped
  • 1 26-oz jar of your favorite marinara sauce
  • 1 cup reduced fat mozzarella cheese, shredded

Season each short rib generously with salt

  • 6 bone-in short ribs (about 5 3/4 pounds)
  • Kosher salt
  • Extra-virgin olive oil
  • 1 large Spanish onion, cut into 1/2-inch pieces
  • 2 ribs celery, cut into 1/2-inch pieces
  • 2 carrots, peeled, cut in 1/2 lengthwise, then cut into 1/2-inch pieces
  • 2 cloves garlic, smashed
  • 1 1/2 cups tomato paste
  • 2 to 3 cups hearty red wine
