Steak & Baked Potato Soup

My mom and I decided to invent a soup on Valentines Day
- 1 1/2 C. Sweet Onion, chopped
- 1 Tbsp. Olive Oil
- 6 C. Water
- 4 cubes Beef Bullion
- 1 1/2 lbs. potatoes, scrubbed and diced with peels on, rinse potatoes (about 6 small potatoes)
- 1 head and stem of broccoli, finely chopped
- 1/4 C. real bacon bits
- 2 C. Milk with 1/2 C. all-purpose four
- 1/2 C. Sour Cream
- Salt and pepper to taste
- 1 to 1 1/2 lbs. cooked steak or hamburger patties, cut into bite-size chunks
Poached Pears

My own concoction...use whatever pears are available
- 2 pears (I used red), peeled, halved, cored - stems intact (hopefully)
- 1/4 c sugar
- 1/8 c honey (not quite)
- 1 c water
- 1/2 Chardonnay (I had Bogle on hand)
- 1 t vanilla
- 1/2 cinnamon stick
- 3 whole cloves
- broken piece star anise
- fresh orange peel - 3 strips
Short Ribs - Crock pot style

sort of my own concoction
- 1 pkg boneless short ribs (about 5 pieces)
- fajita seasoning
- flour
- olive oil
- onion, coarse chop
- garlic, large chop
- 1 t (scant) beef base
- 1/4 c water
- 1/2 c red wine
- 1/8 c Sweet Karen Sue BBQ sauce
- 5-10 small whole mushrooms
Gov Brown's Mint Juleps

- LESS SUGAR:
- 3 cups sugar
- 1 1/2 cups water
- 2 bunches fresh mint, divided
- 24 oz. (3 cups) Kentucky bourbon
- Crushed ice
- 5/8 c Splenda
- 1/8 c sugar
- 1/2 c Agave
- 3/4 c water
Chili Relleno

Roast the peppers (see the Notes section for details)
- 4 to 6 chili relleno peppers
- Olive oil
- ½# lean ground turkey or chicken
- ¼ cup diced onion
- ¼ cup golden raisins
- ⅛ cup chopped pecans
- 2 T chipotle peppers in adobo sauce, chopped
- ¼ t cinnamon
- 2 t Fajita seasoning
- ¼ cup uncooked long grain brown rice, prepared according to package instructions
- 1 cup reduced fat Mexican blend cheese
- ¾ cup egg whites
- 1 -2 T flour
- 2 t Fajita seasoning
Tilapia and Garlic Red Pepper Sauce

For sauce, put all ingredients in a mini-processor and whirl until smooth
- Sauce:
- 2-3 filets tilapia
- 1 Tblspn olive oil
- Salt, pepper, seasoning
- 1 red pepper, roasted and coarsely chopped, or ½ 18 oz jar roasted red peppers
- 2 Tblspn olive oil
- ½ tsp lemon juice
- 1 tsp balsamic vinegar
- 5 cloves roasted garlic
- Couple shakes cayenne
Pork Chops with Sage Butter Sauce

Seared pork chops in a sage butter sauce, a perfect main dish! Serve with potatoes or a large salad
- 2 12-oz pork chops, 1 inch thick
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 2 tablespoons butter
- 1 small handful fresh sage leaves
- 1 small shallot, sliced
- minced garlic
- 1 teaspoon fresh lemon juice
Stuffed Shells

Cook the pasta according to the package directions
- 15-18 jumbo whole wheat shells
- 1-2 Tblspn olive oil
- ¼ - ½ cup onion, diced
- 2-3 cloves garlic, minced
- 8 oz low fat ground turkey
- ½ tsp salt
- ¼ tsp pepper
- 4-6 frozen artichoke hearts, rough chop and defrosted
- 8 oz low fat ricotta cheese
- ½ cup shredded parmesan cheese
- 2 Tblspn egg substitute, or 1 egg beaten
- 2 Tblspn fresh basil, chiffonade
- 1 Tblspn fresh flat leaf parsley, chopped
- 1 26-oz jar of your favorite marinara sauce
- 1 cup reduced fat mozzarella cheese, shredded
Braised Short Ribs - Anne Burrell

Season each short rib generously with salt
- 6 bone-in short ribs (about 5 3/4 pounds)
- Kosher salt
- Extra-virgin olive oil
- 1 large Spanish onion, cut into 1/2-inch pieces
- 2 ribs celery, cut into 1/2-inch pieces
- 2 carrots, peeled, cut in 1/2 lengthwise, then cut into 1/2-inch pieces
- 2 cloves garlic, smashed
- 1 1/2 cups tomato paste
- 2 to 3 cups hearty red wine
- 2 cups water
- 1 bunch fresh thyme, tied with kitchen string (or just thrown in - extract stems later)
- 2 bay leaves
