The Best Cauliflower Crust Pizza

Place a pizza stone in the oven, or baking sheet if you don’t have a pizza stone
- 1 head (Small Head) Cauliflower
- 1/4 cups Parmesan Cheese
- 1/4 cups Mozzarella Cheese
- 1/4 teaspoons Kosher Salt
- 1/2 teaspoons Dried Basil
- 1/2 teaspoons Dried Oregano
- 1/2 teaspoons Garlic Powder
- Red Pepper Flakes (optional)
- 1 Tablespoon Almond Meal (optional)
- 1 whole Egg
Karen’s Chicken Cacciatore

In a large heavy skillet, bring the wine and chicken stock to a boil
- 1 or 2 split boneless-skinless chicken breast
- ⅔ cup dry white wine
- ⅔ cup chicken stock
- Salt and pepper, or fajita seasoning
- 2 cups diced tomatoes and juice
- 1 bay leaf
- 1 T shallots, minced
- 2 T garlic, minced
- ½ t dried Fines Herbes
- ½ t salt
- ½ t measureable Splenda or sugar
- Dash cayenne pepper
- 2 T orzo or 1 T pastina or other very small pasta
- Drizzle of olive oil
- ½ to 1 can of cannellini beans, rinsed and drained
Sticky Honey Garlic Butter Shrimp

- 1/4 cup soy sauce
- 3 cloves garlic, minced
- juice of one small lemon
- 1 pound large shrimp,
- peeled and deveined
- 2 Tablespoons butter

- 4 ounces bacon, diced (1 cup)
- 1 clove garlic, thinly sliced
- 1 shallot, thinly sliced
- 1 cup shelled fresh peas
- Grated zest and juice of 1 orange
- 1/4 cup sliced fresh flat-leaf parsley leaves
- 1 tablespoon unsalted butter
- Kosher salt
Grilled Radicchio Salad

For the dressing: In a small bowl, whisk together the vinegar, olive oil, orange zest, honey, salt, and pepper
- Dressing:
- 3 tablespoons white wine vinegar
- 2 tablespoons olive oil
- 1 orange, zested
- 1 teaspoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Salad:
- Nonstick, nonflammable cooking spray
- 2 heads radicchio, cut in half
- 2 oranges, peeled and sectioned
- 1 cup toasted walnuts
- Salt and freshly ground black pepper

- 2 -12 packs of sweet hawaiian rolls (the small dinner roll ones)
- 1 1/2 lbs of virginia ham
- 12 slices swiss cheese
- 1 stick of real butter
- 2 teaspoons worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
Tomato Soup - Fresh Market

Gotta use San Marzano crushed tomatoes
- Drizzle olive oil
- 1 small carrot - fine dice
- onion - fine chopped
- garlic - fine minced
- 1/2 t beef base
- 1 c hot water
- 2-3 T tomato paste
- Fresh basil, Italian parsley, thyme - minced
- 2-3 T Sherry
- Small can crushed tomatoes
- Sea Salt
- 1 pat of butter
Chicken & Red Lentil Soup (Chicken Rojo)

Added 1/8 c orzo. Used leftovers from French Chicken in a Pot
- 3 quarts Vegetable Stock
- 2 TB Roasted Garlic Puree
- 2 ounces fine diced Red Onion (more if ya like)
- 8 ounces Roasted Red Pepper puree
- 1 cup petite diced Tomatoes with juice
- 1/2 cup fine diced Chicken breast meat (more if ya like)
- 1/2 pound Red Lentils
- 1/2 ounce fresh chopped Parsley
- 1/8 cup fresh squeezed Lemon
- 1 tsp cumin
- 1 tsp dry sage
- Salt & Pepper to taste
- Crispy flatbread or tortilla strips for garnish*
- Fine diced Green Onion for garnish
Coeur a la Creme with a Mixed Berry Compote

- Coeur a la Creme:
- 12 ounces cream cheese, at room temperature
- 1 1/4 cup confectioners' sugar
- 2 1/2 cups cold heavy cream
- 3 teaspoons pure vanilla extract
- 1/4 teaspoon grated lemon zest
- Compote:
- 1 large box strawberries
- 1 large box blackberries
- 1/2 lareg box blueberries
- 1/2 c sugar
- 2 T fresh lemon juice
Whole Wheat Oatmeal Sandwich Bread

- optional:
- 1 c Water
- 1 c Milk
- 1 pkg (2 1/4 t, used 1 T) Active Dry Yeast1 T (20g) Honey
- 2 T unsulphured Molasses, not backstrap molasses
- 2 1/2 c Whole Wheat Flour
- 2 c Bread Flour
- 1 c Rolled Oats
- 4 T unsalted Butter, melted and cooled slightly
- 1 T Sea Salt
- bran or additional oats for topping loaf
