The Ultimate Beef Wellington

- For the Duxelles:
- 3 pints (1 1/2 pounds) white button mushrooms
- 2 shallots, peeled and roughly chopped
- 4 cloves garlic, peeled and roughly chopped
- 2 sprigs fresh thyme, leaves only
- 2 tablespoons unsalted butter
- 2 tablespoons extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- For the Beef:
- 1 (3-pound) center cut beef tenderloin (filet mignon), trimmed
- Extra-virgin olive oil
- Kosher salt and freshly ground black pepper
- 12 thin slices prosciutto
- 6 sprigs of fresh thyme, leaves only
- 2 tablespoons Dijon mustard
- Flour, for rolling out puff pastry
- 1 pound puff pastry, thawed if using frozen
- 2 large eggs, lightly beaten
- 1/2 teaspoon coarse sea salt
- Minced chives, for garnish
- Green Peppercorn Sauce:
- 2 tablespoons olive oil
- 2 shallots, sliced
- 2 cloves garlic, peeled and smashed
- 3 sprigs fresh thyme, leaves only
- 1 cup brandy
- 1 box beef stock
- 2 cups cream
- 2 tablespoons grainy mustard
- 1/2 cup green peppercorns in brine, drained, brine reserved
- Roasted Fingerling Potatoes with Fresh Herbs and Garlic:
- 2 pints fingerling potatoes
- 2 sprigs fresh rosemary
- 2 to 3 sprigs fresh sage
- 3 sprigs fresh thyme
- 6 cloves garlic, left unpeeled
- 3 tablespoons extra-virgin olive oil, plus for sheet pan
- Salt and pepper
- Warm Wilted Winter Greens:
- 1/4 cup honey
- 1/2 cup balsamic vinegar
- 1/2 pint walnuts, for garnish
- 3 bunches assorted winter greens (such as Swiss chard, radicchio, or escarole), washed, stemmed, and torn into pieces
- 1 tablespoon grainy mustard
- Extra-virgin olive oil
- 1/2 cup pomegranate seeds, for garnish
- Parmesan shavings, for garnish
- 1 shallot, chopped, for garnish
Walnut and Maple Old Fashioned Recipe

- 2 ounces bourbon (1 1/2 oz)
- ¼ ounce of pure maple syrup
- 3 dashes of walnut bitters
- 1 cup of ice
- Cracked walnut (garnish)
Gran's Whole Wheat French Bread

If using Active Dry Yeast: Heat water until warm (100° to 110°F)
- Egg Wash:
- 1-1/2 cups water
- 2 envelopes Fleischmann's® Active Dry OR RapidRise Yeast
- 1 tablespoon olive oil
- 1 tablespoon sugar
- 1 teaspoon salt
- 2-1/2 cups all-purpose flour
- 1 cup whole wheat flour
- Cornmeal (optional)
- 1 egg white, beaten with 1 tablespoon water
Cherry Sauce for Ice Cream

In sauce pan, combine cherries, sugar, 1/4 c water and syrup
- 2 cups sweet cherries, pitted and quartered
- 1 ⁄2 cup sugar
- 1 ⁄4 cup water
- 1 ⁄4 cup light corn syrup
- 2 tablespoons cornstarch
- 2 tablespoons water
- 1 tablespoon lemon juice (omit, or reduce - too much lemon)
Spring Fling White Layer Cake

1. Preheat oven to 350 degrees F
- Cake
- 3 3/4 cups cake flour
- 1 1/2 cups SPLENDA® No Calorie Sweetener, Granulated
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 cup sugar
- 2/3 cup unsalted butter, softened
- 7 egg whites
- 1 1/4 cups reduced-fat buttermilk
- 1 tablespoon vanilla
- 1/2 teaspoon almond extract
- Icing
- 1/2 cup light butter, softened
- 1 cup SPLENDA® No Calorie Sweetener, Granulated
- 1 pound fat free cream cheese
- 2 teaspoons vanilla
- Filling
- 3/4 cup reduced sugar apricot preserves
- 1 pint strawberries, thinly sliced
Cilantro Jalapeno Dip Recipe

Puree the jalapenos and cilantro in a food processor until it looks like a paste
- 6 to 8 jalapenos
- 1 bushel cilantro (meaning a huge handful)
- 1 packet of dry Ranch dressing mix
- 1 cup Sour Cream
- 1 cup Mayonnaise
Turkey pozole soup with green chilies

Pour the oil into a large, heavy-bottomed pot and heat over medium heat
- 2 pounds turkey meat cut into 1 inch cubes
- 1/4 cup olive oil
- 2 large onions, peeled and chopped
- 2 red peppers, seeded and chopped
- 1 small jalapeño pepper, seeded and chopped
- 2 tablespoons ground cumin
- 2 tablespoons Ancho chili powder
- 2 tablespoons peeled, chopped garlic
- 1 15 ounce can chopped green chilies
- 1 cup crushed tomatoes
- 2 quarts chicken broth
- 1 28 ounce can golden or white hominy
- 1/4 cup roughly chopped cilantro leaves
- 1/2 cup chopped scallions
- Sour cream
- Sea salt and freshly ground black pepper

- 1 1/2 pounds Brussels sprouts, halved
- 3 tablespoons extra-virgin olive oil

- 8 ounces slab bacon, cut into lardoons
- 1/2 cup walnuts, coarsely chopped
- 2 cloves garlic, sliced
- 2 shallots, sliced
- 2 tablespoons red wine vinegar
- 1 tablespoon honey
- 1 tablespoon grainy mustard
