Spicy Rapid Roast Chicken

Directions Preheat oven to 450 degrees F (230 degrees C)
- 1 (3 pound) whole chicken
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/4 teaspoon paprika
- 1/8 teaspoon cayenne pepper
Ken's Spicy Brown Sugar and Honey BBQ Sauce

Sauce for basting the last hour or two of the smoke or dipping at the table
- 2/3 cup chicken stock
- 2/3 cup brown sugar
- 1/4 cup cider vinegar
- 1/4 cup ketchup
- 5 cloves garlic
- 3 tablespoons olive oil
- 1 tablespoons yellow mustard
- 1 Tsp Dry Mustard
- 2 tablespoons soy sauce
- 1 teaspoon cayenne
- 1 teaspoon nutmeg
- 1/4 Cup Honey
Smoked Pork Bean Soup

1.Dice onion and scallions and saute' in olive oil until tender add garlic and saute' until aromatic and tender
- 1 lb (give or take) smoked pork, rib meat, tri tip etc.
- 2 tbs extra virgin olive oil
- 2 tsp cumin
- 1 large onion (chopped)
- 1 scallion (minced)
- 5 med cloves garlic (minced)
- 2 cans diced tomato and peppers
- 1 can white kidney beans
- 1 can light red kidney beans
- 2 cans black beans
- 32 oz. chicken sweat (canned chicken broth)
- 1/2 tsp black pepper
- 1 can cream corn
- 1/8 cup lime juice
- 1 can whole kernel corn
- 1/2 cup diced sweet vidalia onions

- 1 bay leaf
- 5 whole cloves
- 5 cardamom pods (crushed) I used 1/2 t. ground cardamom
- 1 star anise
- 10 black peppercorns
- 1 (28 oz) can whole tomatoes (I used roasted homegrown tomatoes)
- 1 large yellow onion, quartered
- 2 Tablespoons neutral vegetable oil (I used olive)
- 2 teaspoons kosher salt
- 1/3 cup packed brown sugar (I used organic evaporated cane juice and organic molasses)
- 1/2 cup champagne vinegar (I used organic white balsamic)
- 1 teaspoon hungarian paprika (I used smoked paprika)
- freshly ground black pepper
Shrimp Creole ala Aunt Beverly

This comes from the Aunt of a friend, who refer to themselves honest to goodness "CoonAss" Cajuns!
- 4 lbs. medium-size fresh shrimp, peeled, deveined, and coarsely chopped
- 1/4 cup Canola oil
- 1/4 cup all-purpose flour
- 2 cups onion, finely chopped
- 1 cup celery, finely chopped
- 3/4 cup green onions, thinly sliced
- 1 large green pepper, chopped
- 4 cloves garlic, minced
- 3 fresh tomatoes, peeled, seeded, and small diced
- 1 can Rotel tomatoes with chilies, undrained, chopped, (10-1/2 oz)
- 1 can tomato sauce, (8 oz)
- 1 can tomato paste, (12 oz)
- 3 tomato paste cans of water (or chicken stock when it's not Lent)
- 1/2 cup sherry wine
- 3 tsp. Frank Davis Seafood Seasoning
- 1/2 tsp. kosher salt
- 1/2 tsp. black pepper
- 1/2 tsp. red pepper flakes
- 3 bay leaves
- 2 sprigs of fresh thyme
- 2 Tbsp. fresh-squeezed lemon juice + zest of one lemon
- 2 tsp. Worcestershire sauce
- Dash Frank Davis Cayenne/Garlic Hot Sauce
- 2 Tbsp. sweet cream butter
- 1/3 cup parsley, chopped
- 6 cups hot boiled long-grain rice
Ken's Pulled Pork Finishing Sauce

1.Bring vinegar to boil and add sugar
- 1 Cup Apple Cider Vinegar
- 1 Cup Ketchup (I have tried others, Heinz is the best)
- 1/2 Cup Ginger Ale (I prefer Reed's Original Ginger Brew)
- 2 Tbs Dark Brown Sugar
- 1 Tsp Salt
- 1 Tsp Pepper
- 1/2 Tsp Ground Ginger
- 1/4 Tsp Cayenne Pepper
- 1/4 Tsp Nutmeg
Orange Cranberry Sauce

1.Place the sugars, orange juice, water, and cinnamon in a heavy saucepan, and stir to dissolve the sugar
- 1/2 cup white sugar
- 1/2 cup brown sugar
- 1/2 cup orange juice
- 1/2 cup water
- 1/4 teaspoon ground cinnamon
- 1 (12 ounce) package fresh or frozen cranberries
SHRIMP SALAD
