- 3 cups sugar
- 3/4 cup butter
- 1 1/4 cup milk (I used Evaporated Milk)
- 3 cups Quick Oats (Large Oats)
- 1 cup unsweetened fine coconut
- 12 TBSP unsweetened cocoa
- 1 1/2 cup coconut (for rolling the balls)
Sweet Spicy Linguine alla Vodka

- 8 ounces whole wheat linguine (or spaghetti)
- 1 1/2 cups of store bought low-fat marinara sauce
- 1 large bottle fie-roasted red peppers (about 4 ounces) cut into thin strips (so I didn't use this I just used sweet red peppers and sauteed them real quick)
- 1/4 cup 2% Greek Yogurt
- 1 cup chopped fresh basil
- 1 to 1 1/2 teaspoons hot pepper sauce (like Tabasco)
- Salt
- Pepper
- 6 tablespoons grated Parmigiano-Reggiano cheese (so yummy!)
Partridgeberry Orange Tea Biscuits

family favorite...makes 24 biscuits
- 1 can mandarin oranges, drained and juice reserved
- 1/2 cup sugar
- 1 cup butter
- 2 eggs
- 1 TBSP vanilla
- 4 cups all purpose flour
- 3 TBSP baking powder
- 1 cup partridgeberries, fresh or frozen
- Egg Wash: 1 egg and 1 TBSP water, mixed together and beaten with a fork to combine.
Firecracker Mary

In a small pitcher,mix all ingredients, serve over ice
- 1 1/2 cups tomato juice
- 2 oz vodka
- 3 TBSP beef broth
- 2 tsp dill pickle juice
- 2 tsp ground mustard
- 1 tsp lemon juice
- 1 tsp lime juice
- 1/2 tsp hot pepper sauce
- 1/2 tsp Worcestershire sauce
- 1/2 tsp prepared horseradish
- 1/4 tsp garlic powder
- 1/4 tsp pepper
- ice
Crispy on the Top Tuna and Green Pea Casserole

Preheat oven to 425°F. Prepare an 8x8x2-inch baking dish by spraying with cooking spray and set aside
- 6 ounces whole wheat rotini
- 3 ⁄4 cup reduced-fat sour cream
- 3 ⁄4 cup 2% Greek yogurt
- 3 tablespoons Dijon mustard
- 1/2 tsp lemon pepper seasoning
- 5 ounces 50% reduced-fat extra old cheddar cheese, shredded
- 18 ounces canned albacore tuna, packed in water, drained
- 1 1⁄2 cups frozen peas

- 1/2 cup sugar
- 1 1/2 tsp finely grated orange zest
