- 1/2 cup olive oil
- 1/2 cup balsamic vinegar
- 1 TBSP fresh basil, sliced thinly
- 2 cloves garlic, minced
- 1 tsp Dijon mustard
- salt and pepper to taste
Mom's Banana Bread

best banana bread ever!!
- 1 cup sugar
- 1/4 cup butter, room temperature
- 1 2/3 cups ripe bananas, mashed (about 3 bananas)
- 1/4 cup skim milk
- 1/4 cup greek yogurt
- 2 large egg whites
- 2 cups flour (substitute 1 cup for w/w flour)
- 1 tsp baking soda
- 1/2 tsp salt
Newfoundland Meat Stew

best made with moose meat or beef
- 3 TBSP pork or vegetable oil
- small piece of salt pork
- 2 - 3 lbs meat (1 inch cubes)
- 1 large onion, chopped
- 2 celery stalks, chopped
- 3 TBSP all purpose flour
- 4 cups beef broth (or water)
- 4 large carrots, chopped
- 1 small turnip, chopped
- 8 medium potatoes, cubed
- salt and pepper to taste
Hash Brown Casserole

Family favorite! Great with ham!
- 1 can cream soup (mushroom, broccoli, celery or chicken) 10oz/284 ml
- 1/2 cup sour cream
- 1 750g pk hash browns, thawed in refrigerator
- 2 cups shredded cheese, sharp or extra old
- 2 cups Ritz crackers, crushed (about 1 cup crushed)
- 2 TBSP Butter, melted
Spicy Dipping Sauce

- 1/4 cup mayo
- 2 tsp sriracha
- 1 tsp fresh lime juice
- 1/2 tsp low sodium soy sauce
Homemade Blueberry Sauce

In a saucepan over medium heat, combine the blueberries, 1/2 cup water, sugar and lemon juice
- 2 cups fresh or frozen blueberries
- 1/2 cup water
- 1/4 cup sugar
- 2 TBSP fresh lemon juice
- 2 TBSP cornstarch mixed with 2 TBSP cold water
- 1/2 tsp vanilla
- zest of 1 lemon (1 TBSP)
One Pot Spicy Thai Noodles

family favorite!! Make lots
- 1 lb fresh linguine
- 2 TBSP olive oil
- 2 large eggs, lightly beaten
- 1/2 tsp crushed red pepper flakes
- 1 zucchini, cut in half and cut into half circles
- 8 oz mushrooms, chopped
- 1 clove garlic, minced
- 2 TBSP brown sugar
- 1/3 cup low sodium soy sauce
- 1 TBSP sriracha sauce
- 2 inches fresh ginger, grated
- juice of 1 lime
- 2 - 3 TBSP creamy peanut butter, melted
- 1 handful or fresh cilantro or basil
- 4 green onions
- 1/4 cup peanuts
- ADD chopped chicken and / or shrimps to make a complete meal. Add when you toss the noodles and sauce.
Italian Bean Soup

- 1 - 2 turkey sausages
- 1 onion, chopped
- 1 small potato, peeled ad finely chopped
- 1 stalk of celery, chopped
- 1 clove garlic, minced
- 2 TBSP olive oil
- 3 cans low sodim chicken broth
- 1 can cannellini beans (15 oz) rinsed and drained
- 1 can 14 oz italian stewed tomatoes, undrained and chopped
- 1/4 cup minced fresh parsley
- 1 TBSP prepared pesto
- 1/4 cup uncooked orzo
- 1 cup fresh baby spinach
- 1/4 cup grated parmesan cheese
Basil Aioli

Excellent on grilled chicken sandwiches or a dip for chicken fingers!
- 1 cup mayo
- 1/2 cup basil leaves, tightly packed
- 1 clove minced garlic
- 1/2 tsp lemon zest
- 2 tsp lemon juice
- pinch salt and pepper
Mac and Cheeseburger casserole

Cook beef until browned. Add mushrooms, peppers, onions and celery
- 1 lb ground beef
- 2 cup sliced mushrooms
- 1 cup chopped yellow and red peppers
- 1/2 cup chopped onions
- 1/2 cup chopped celery
- 1 can stewed tomatoes, undrained (14 oz)
- 1 can 10 oz cream of mushroom soup
- 2 cups uncooked ww elbow pasta
- 2 TBSP worcestershire sauce
- 1 TBSP chili powder
- 1/4 cup sharp shredded cheddar cheese
