  • 1 lb fresh linguine
  • 2 TBSP olive oil
  • 2 large eggs, lightly beaten
  • 1/2 tsp crushed red pepper flakes
  • 1 zucchini, cut in half and cut into half circles
  • 8 oz mushrooms, chopped
  • 1 clove garlic, minced
  • 2 TBSP brown sugar
  • 1/3 cup low sodium soy sauce
  • 1 TBSP sriracha sauce
  • 2 inches fresh ginger, grated
  • juice of 1 lime
  • 2 - 3 TBSP creamy peanut butter, melted
  • 1 handful or fresh cilantro or basil
  • 4 green onions
  • 1/4 cup peanuts
  • ADD chopped chicken and / or shrimps to make a complete meal. Add when you toss the noodles and sauce.
