  • 1 yellow onion, chopped
  • 1 - 2 stalks celery
  • 2 green or colored peppers, chopped
  • 1/2 tsp salt
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1 TBSP chili powder
  • 2 tsp chipotle chili powder
  • 2 tsp cumin
  • 1/2 tsp red pepper flakes
  • 3 small sweet potatoes or 2 large, peeled and diced
  • 1 cup uncooked quinoa
  • 1 28 oz can crushed tomatoes
  • 1 15 oz black beans, rinsed and drained
  • 1 12 oz bottle beer (any dark or amber beer would work) or substitute with more chicken broth
  • 1 - 2 cups low sodium chicken broth
  • for serving ~ cilantro, avocado, shredded cheese, tortilla chips,sour cream or yogurt
