Lasagna with Pork

Bring a large pot of well-salted water to a boil
- Marinara Sauce:
- Kosher salt
- 1 1/2 (16-ounce) boxes lasagna noodles
- Olive oil
- 1 pound bulk Italian sausage
- 4 cloves garlic, smashed, divided
- Crushed red pepper flakes
- 1 (12-ounce) package cremini mushrooms, stems removed, caps sliced
- 1 zucchini, cut in 1/2 lengthwise and cut on the bias
- 1/2 pound fresh spinach or 1 box frozen spinach thawed and water squeezed out.
- 2 cups ricotta
- 2 cups grated Parmigiano-Reggiano, divided
- 2 eggs
- 6 to 7 basil leaves, cut into chiffonade
- 1 pound slice fresh mozzarella
- 1/4 cup extra-virgin olive oil
- 1/4 pound pancetta, diced
- 2 large Spanish onions, cut into 1/4-inch dice
- Kosher salt
- 4 large cloves garlic, smashed and chopped
- 2 carrots diced
- 4 (28-ounce) cans Italian plum San Marzano tomatoes
- 3 cup beef broth
Shrimp in Lemon Sauce

Marinate the shrimp in the olive oil, oregano, and garlic 30 minutes Preheat a grill
- 24 large shrimp, cleaned and deveined
- 1/2 cup olive oil
- 1 tablespoon chopped fresh oregano
- 1 tablespoon minced garlic
- 1 cup fish broth
- 1/2 cup finely chopped tomatoes
- 2 eggs
- 1/3 cup lemon juice
- 1 teaspoon crushed red pepper
- Salt and freshly ground black pepper
- 2 tablespoons chopped fresh parsley
- 6 wooden skewers, soaked in hot water for 30 minutes
Cinnamon Frosting

In a medium heavy-bottomed saucepan, whisk the sugar and flour together
- 1 1/2 cups sugar (1 cup)
- 1/4 cup all-purpose flour (3 tablespoons)
- 1 1/2 cups milk (1 cup)
- 1/4 cup heavy cream (3 tablespoons)
- 1 1/2 cups (3 sticks) unsalted butter, soft but cool, cut into small pieces (3/4 cup [1 1/2 sticks] This is less than 2/3 of the recipe)
- 1 teaspoon pure vanilla extract (1/2 teaspoon)
- 2 teaspoons cinnamon (I omitted)
- Red Hots (cinnamon imperials) candies, for decoration
Chicken Salad

Chutney Place all ingredients in saucepan and cook for one hour Simmer uncovered for 60 minutes
- CHICKEN:
- 6 Peaches diced
- 1 onion diced
- cider vinegar diluted with a little water
- 1/2 cup sugar
- 1 red bell pepper diced
- raisins and dried cherries
- one tablespoon cinnamon
- 1/2 teaspoon ground cloves
- 2 tablespoons cold water
- 2 tablespoons cornstarch
- skinless boneless chicken
- mayonnaise and yogurt with curry:
- 3/4 cup olive oil
- 1 tablespoon dry mustard
- 1 tablespoon sugar
- 1 teaspoon salt
- 1/4 teaspoon Dijon mustard
- 1 teaspoon curry
- 3 1/4 cups yogurt
- chopped green onions
- toasted almonds
- salt and pepper
Hidden Chocolate Kiss Cookies

In a large bowl, cream the butter, sugar, and vanilla and almond extracts
- 1 cup (2 sticks) butter, at room temperature
- 1/3 cup sugar
- 1/3 cup light brown sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon pure almond extract
- 1 3/4 cups all-purpose flour
- 3/4 cup finely chopped pecans or you may use 1 cup mini chocolate chips
- 1 (9-ounce) package chocolate candy kisses (recommended: Hershey's Kisses)
- 1 1/2 cups confectioners' sugar
Moroccan Chicken with Olives and Lemon (Chicken Tagine)

Bone-in chicken parts can be substituted for the whole chicken
- Ingredients
- 1 1/4 teaspoons sweet paprika
- 1/2 teaspoon ground cumin
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground cinnamon
- 3 strips lemon zest (each about 2 inches by 3/4 inch)
- 3 tablespoons fresh lemon juice , from 1 to 2 lemons
- 5 medium cloves garlic , minced or pressed through garlic press (about 5 teaspoons)
- 1 whole chicken (3 1/2 to 4 pounds), cut into 8 pieces (4 breast pieces, 2 thighs, 2 drumsticks; wings reserved for another use) and trimmed of excess fat
- Salt and ground black pepper
- 1 tablespoon olive oil
- 1 large onion , halved and cut into 1/4-inch slices (about 3 cups)
- 1 3/4 cups low-sodium chicken broth
- 1 tablespoon honey
- 2 medium carrots , peeled and cut crosswise into 1/2-inch-thick coins, very large pieces cut into half-moons (about 2 cups)
- 1 cup Greek cracked green olives , pitted and halved
- 2 tablespoons chopped fresh cilantro leaves
Smoked, Spice Rubbed, Texas-Style Brisket on Texas Toast
