Apple Strudel

- 10 to 12 Granny Smith apples, peeled, cored and cut into thin strips
- Juice and zest of 1 lemon
- 1 large can pineapple, drained and diced
- 3/4 cup sugar
- Pinch salt
- 1/2 cup finely chopped nuts
- 2 sticks unsalted butter
- 1/4 cup vegetable oil
- 1 jar lingonberry preserves
- 1 pound package phyllo dough
- Mixture of 1 large freshly ground cinnamon stick, 1/3 cup sugar and 1 cup plain breadcrumbs
Breakfast Sausage Casserole

Preheat oven to 350 degrees
- Ingredients
- Butter, for greasing
- 1/2 loaf of sliced white loaf bread
- 1 pound fresh bulk pork sausage with sage
- 1 pkg. (26-32 ounces) frozen shredded hash brown potatoes
- 6 green onions or leeks or medium onion
- 1 red pepper diced
- 1 Jalapeno (optional)
- 20 ounces sharp Cheddar, grated
- 2 cups half-and-half
- 1 teaspoon dry mustard
- 1 teaspoon salt
- 5 large eggs, lightly beaten
Polish Coffee Cake

1. Place sugar and butter in a large bowl or stand mixer
- Dough:
- 1/2 cup sugar
- 4 ounces (1 stick) softened butter
- 1 1/2 cups milk
- 2 packages active dry yeast
- 5 large eggs beaten with 1 teaspoon salt
- 6 cups all-purpose flour
- 1/2 teaspoon vanilla (optional)
- 1 1/2 cups dark raisins (optional)
- STREUSEL
- 1/4 cup sugar
- 1/4 cup All-purpose flour
- 1/4 cup salted butter, softened
Chocolate Chunk Muffins

CRÈME FRAÎCHE Directions: Stir together the cream and buttermilk in a medium bowl or storage container

- 3 ounces SCHARFFEN BERGER 62% semisweet chocolate, cut into chunks

- 1 1/2 cups all purpose flour
- 1 tablespoon unsweetened cocoa powder
- 1/2 teaspoon ground cinnamon

Sauteed Mixed Mushrooms with Sage, Butter and Parsley

For the grits: Bring the milk, water, and salt to a boil in a 4-quart saucepan, set over medium-high heat
- For the grits:
- 2 cups whole milk
- 2 cups water
- 1 1/2 teaspoons kosher salt
- 1 cup grits or coarse ground cornmeal
- 1/2 teaspoon freshly ground black pepper
- 4 tablespoons unsalted butter
- 4 ounces sharp Cheddar, grated
- For the Mushrooms:
- 3/4 stick butter
- 2 tablespoons roughly chopped fresh sage leaves
- 1/2 pound cremini mushrooms, quartered
- 1/2 pound shiitake mushrooms, stemmed and caps quartered
- 1/4 pound chanterelle mushrooms, wiped clean and cut in 1/2
- 2 ounces porcini mushrooms, stems trimmed and sliced into 1/4-inch slices
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon chopped fresh parsley leaves
- 1/4 cup of white wine
