Apple Coffee Cake

Sift flour and measure then sift together with the other dry ingredients
- For the cake:
- 1 1/2 cups flour
- 2 1/4 teaspoons baking powder
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1 egg
- 1/2 cup milk
- 1/4 cup vegetable shortening, melted
- 1 1/2 cups chopped Granny Smith apples (2 to 3 apples)
- Streusel Topping:
- 1/2 cup sugar
- 1/4 cup flour
- 2 tablespoons butter
- 1/2 teaspoon cinnamon
- Accompaniment: vanilla ice cream

- Garnishes (can prep while pozole is cooking):
- Ingredients
- 2 2 2 ounces guajillo, ancho, or a combination of both, chili pods
- Salt
- 1 1 1 large (54 ounce, ) can white hominy, drained and rinsed
- 2 2 1 to 1 1/2 to with bone), cut into 1 to 1 1/2 inch cubes (can also use pork shanks), make sure to use a cut well marbled with fat

- Vegetable oil cooking spray
- Four 6-to-7-inch corn tortillas
- 2 teaspoons extra-virgin olive oil
- 1/8 teaspoon kosher salt
- Ceviche:
- One 10-ounce halibut fillet, skinned and cut into 1/2-inch cubes
- 12 large shrimp deveined and peeled
- 1/2 cup fresh lemon juice (from 2 large lemons)
- 1/4 cup fresh lime juice (from 3 to 4 large limes)
- Zest of 1 large lemon
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- Salad:
- 2 tablespoons extra-virgin olive oil
