Pecan and Chocolate Scones

To toast nuts : Preheat oven to 350 degrees F (180 degrees C) with rack in the middle of the oven
- Egg mixture for brushing tops of scones:
- 2 cups (280 grams) all purpose flour
- 1/4 cup (50 grams) granulated white sugar
- 1 1/4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoons instant espresso powder (optional)
- 1/2 cup (113 grams) (1 stick) unsalted butter, cold and cut into pieces
- 1/3 cup (60 grams) semi sweet chocolate chips or chunks
- 1/2 cup (50 grams) toasted and chopped walnuts or pecans
- 2/3 cup (160 ml) buttermilk
- 2 tablespoons pure maple syrup
- 1 large egg, lightly beaten
- 1 tablespoon milk or cream
Cheesy Squash Casserole

Directions Preheat the oven to 350 degrees F
- 1 tablespoon vegetable oil
- 6 medium yellow summer squash, thinly sliced
- 1 large Vidalia onion, thinly sliced
- 1 tablespoon butter
- 1/2 cup grated Parmesan
- 1 cup shredded sharp Cheddar
- 1/2 cup sour cream

- 1/2 cup tomato-vegetable juice (V8)
- 1 tablespoon chopped fresh basil leaves
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon Dijon mustard
- 1/2 teaspoon sugar
- 1/4 teaspoon salt
- 1/8 teaspoon coarsely ground black pepper
Cinnamon-Bun Filled Pancakes

To make the cinnamon filling, in a bowl, still together the granulated sugar, flour, cinnamon and salt
- For the cinnamon filling:
- 1/2 cup granulated sugar
- 2 Tbs. all-purpose flour
- 1 1/2 Tbs. ground cinnamon
- 1/4 tsp. salt
- 4 Tbs. (1/2 stick) unsalted butter, cut into 1/2-inch cubes,
- at room temperature
- For the cream cheese frosting:
- 3 oz. cream cheese, at room temperature
- 4 Tbs. (1/2 stick) unsalted butter, at room temperature
- 1 1/2 cups confectioners' sugar
- 3 to 4 Tbs. milk
- For the pancakes:
- 2 cups all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 Tbs. granulated sugar
- 4 eggs, separated
- 2 cups milk
- 4 Tbs. (1/2 stick) unsalted butter, melted, plus more for cooking
Margherita Pizza

Preheat a wood-fired pizza oven to very hot 4 hours before cooking
- PIZZA DOUGH:
- 1 (28-ounce) can pelati tomatoes*
- Kosher salt
- All-purpose flour, for dusting
- 4 (12-ounce) pizza dough balls, at room temperature, recipe follows
- 8 ounce mozzarella, grated
- Handful fresh basil leaves, torn
- 1 (.25-ounce) package dry active yeast (2 1/4 teaspoons)
- 1/2 cup lukewarm water (about 105 to 115 degrees F)
- 4 cups bread flour
- 1 1/2 teaspoons salt
- 3/4 cup cold water
- 1/4 cup olive oil, plus more
Spaghetti with Creamy Wild Leek Pesto

1.Heat a skillet or large saucepan on medium-high heat and add bacon
- 3 oz. slab bacon or regular bacon, cut into small dice
- 2 oz. wild leeks = about 10 to 12
- 2 teaspoons neutral oil such as safflower or canola
- 1/2 cup whipping cream
- 1/4 grated parmesan cheese
- Salt and pepper, to taste
- 1/2 lb. dried spaghetti

- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1 egg, room temperature and beaten
- 2 tablespoons butter, softened
- 1/2 cup evaporated milk
- 4 cups bread flour or all-purpose flour
- 3 teaspoons instant active dry yeast
- Vegetable oil*
- Powdered sugar for dusting
- * Use just enough vegetable oil to completely cover beignets while frying.
Chocolate Gingerbread

- 1-3/4 cups plus 3 tablespoons sifted all-purpose flour
- 2-1/2 teaspoons ground ginger
- 1 teaspoon baking powder
- ¾ teaspoon ground cinnamon
- ¾ teaspoon ground allspice
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¼ cup SCHARFFEN BERGER unsweetened cocoa powder
- 2/3 cup boiling water
- 10 tablespoons unsalted butter
- ¾ cup plus 2 tablespoons granulated sugar
- 2 large eggs at room temperature
- ½ cup unsulphured molasses
- 1 cup heavy cream for whipping
- 2 tablespoons granulated sugar (optional)
Spicy Pop Pulled Pork

- 2 onions, peeled and quartered
- 1 whole pork butt (pork shoulder roast)
