Lemon Bar Trifle

In a small bowl, combine flour and pecans; stir in butter

- 2 cups all-purpose flour
- 1 cup chopped pecans
- 1 cup butter, melted

- 1/4 cup cornstarch
- 1/4 cup all-purpose flour
- 1-3/4 cups cold water
- 3 egg yolks, beaten
- 2/3 cup lemon juice
- 2 tablespoons butter
- 4 teaspoons grated lemon peel
- Cream Cheese Layer
- 1 package (8 ounces) cream cheese, softened
- 3 cups confectioners' sugar
- 1 carton (8 ounces) frozen whipped topping, thawed
Pumpkin Bread Pudding

Preheat oven to 350 degrees F (177 degrees C) and place rack in the center of the oven
- Bread :
- 5 cups (140 grams) cubed day-old bread, (crusts left on or removed)
- 1/2 cup golden raisins
- Custard:
- 2 large eggs plus 1 large egg yolk
- 3/4 cup canned pure pumpkin (no spices added)
- 1 1/2 cups (360 ml) half & half, milk, light cream or a combination thereof
- 3 tablespoons (35 grams) unsalted butter, melted and cooled
- 1/2 cup (105 grams) light brown sugar
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- 1/8 teaspoon ground cloves
- 1/4 teaspoon salt
- Toffee Sauce: (Makes 3/4 cup)
- 1/2 cup (110 grams) dark brown sugar
- 4 tablespoons (57 grams) unsalted butter, cut into pieces
- 1/4 cup (60 ml) heavy whipping cream
- 1/4 teaspoon pure vanilla extract

- Poppy Seed Honey Dressing:
- 1/4 cup cider vinegar
- 1 cup mayonnaise
- 1/3 cup poppy seeds
- 1/3 cup honey
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 medium cabbage, cored, finely shredded
- 2 large carrots, peeled, julienne
- 1 bunch scallions, thinly sliced

Maple Bourbon Sweet Potato Pie

This is like a sweet potato custard, and you will want to take care not to overbake the filling
- Ingredients
- 2 large or 3 medium sized sweet potatoes
- 4 tablespoons (2 ounces) butter, melted
- 1 teaspoon vanilla extract
- 3 eggs
- 1 egg yolk
- 3/4 cup cream
- 1/4 cup plus 2 tablespoons maple syrup
- 1/4 cup plus 1 tablespoon brown sugar
- 1/4 cup bourbon
- 1/4 teaspoon kosher salt
- 1/4 teaspoon grated nutmeg (preferably freshly grated)
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- A few grinds black pepper
- 1 (9-inch) basic pie crust, baked blind, recipe follows
Currywurst Sauce

Heat 2 tbsp. canola oil in a saucepan over medium heat
- 2 tbsp. canola oil
- 1 finely chopped large yellow onion;
- 3 tbsp. curry powder
- 1 tbsp. hot paprika
- 1 tbsp sweet paprika
- crush 2 cups whole peeled canned tomatoes (with juice) into pan
- 1/4 cup sugar plus 4 tablespoons
- 1 ⁄3 cup red wine vinegar
- 2 tablespoons currywurst ketchup
- salt to taste

- 1-quart 1-quart milk (cream, whole, low fat, or skim) — In general the higher the milk fat level in the yogurt the creamier and smother it will taste. Note: If you use home-produced milk it must be pasteurized before preparing yogurt.
- 1/3-cup 2/3-cup milk powder — Use 1/3-cup powder when using whole or low fat milk, or use 2/3-cup powder when using skim milk. The higher the milk solids the firmer the yogurt will be. For even more firmness add gelatin (directions below).
- 2 to 4 4 tablespoons sugar or honey.
- 1 5 to thick, firm yogurt swell 1 teaspoon unflavored gelatin in a little milk for 5 minutes. Add this to the milk and non-fat dry milk mixture before cooking.
Caramel-Filled Chocolate Ebelskivers

- 1 3/4 cups chocolate ebelskiver pancake mix
- 2 eggs, separated
- 1 1/3 cups milk
- 2 1/2 Tbs. unsalted butter, melted, plus more for cooking
- 3/4 to 1 cup sugar
- 26 individually wrapped soft caramel candies, such as Kraft or Brach’s, unwrapped
Giardiniera

Combine 2 cups water and the salt in a glass or non-reactive bowl
- 2 Tablespoons kosher salt
- 1 cup small-diced carrots
- 1 cup tiny cauliflower florets
- 4 to 8 serrano peppers, sliced (depending on heat level desired)
- 2 cloves garlic, minced
- 1 stalk celery, diced small
- 1 red bell pepper, diced small
- artichoke hearts cut in quarters
- 6 to 8 pepperoncinis
- 1 cup olives
- 2/3 olive oil and 1/3 olive oil, grapeseed and canola oil mix from Costco
- 1 tablespoon dried oregano
