Popcorn Shrimp

Stir together the flour, sugar, salt, and seasonings
- 1 cup flour
- 1 tsp. each sugar and salt
- ½ tsp. each onion powder, garlic powder, white pepper, black pepper, ground red pepper, dried thyme
- 1 ½ cups milk
- 2 eggs, lightly beaten
- 2 cups oil
- 2 lbs. baby gulf shrimp, peeled
- 2 cups bread crumbs
Ganache

- 8 oz. semi sweet chocolate, cut into pieces
- ¾ cup whipping cream
- 2 tbs. butter
- 1 tbs. cognac or brandy
Panettone con la Passola

Primo sbatere uova, zucchero, olio, e latte con la machinetta
- 6 uova
- 9 onse di zucchero
- 1 bichiero del vino di olio
- 1 bichiero del vino di latte
- 1 bustina di vanilla
- 2 bustine di lievito della pizza, sguagliarlo con un messo bicchieri di agua
- 1 limone e un arangio gratugiato
- 1 coppa di Passola, la Passola non lavarla
- Farina abbastanza per fare una pasta soffice

Dissolve yeast in water, and set aside for 5 minutes
- 1/2 ½ tbs. yeast
- 1/4 ¼ cup water, 105 – 115 degrees
- 1/4 ¼ cup milk
- 4 tbs. butter
- 1/2 ½ tsp. salt
- 2 tbs. sugar
- 2 – 2 ½ cups flour
- 1 egg
- 1/2 ½ cup light brown sugar, firmly packed
- 2/3 cup chopped walnuts
- 1/2 ½ tsp. cinnamon
- 4 tbs. melted butter
Chicken Fingers

Preheat oil to 350 degrees
- 1 cup corn flakes
- 2 tsp. crushed red pepper flakes
- 1 ¼ tsp. cayenne pepper
- 1 tsp. cumin
- Salt
- ½ tsp. Paprika
- ¼ tsp. onion powder
- Dash garlic powder
- 1 egg
- 1 cup milk
- 1 cup flour
- 1 lb. chicken breast fillets, sliced into strips, ½” wide

- 3 ½ - 4 ½ lbs. chicken parts, rinsed and pat dry, skin removed
- Salt and pepper
- 3 tbs. olive oil
- 2 cups chopped onions
- 1 bay leaf
- ½ tsp. dried rosemary
- ½ tsp. dried sage
- 1 clove garlic, minced
- ½ cup white wine
- 8 oz. tomatoes, crushed
- ¾ cup chicken stock
- ½ cup – 1 cup mushrooms, sliced
- 1/3 cup olives, pitted and sliced

In a large mixing bowl combine butter and vanilla with both sugars and beat until light and fluffy
- 1 cup unsalted butter; softened
- 2 teaspoons vanilla extract
- 1 cup granulated sugar
- 1 1/4 cups brown sugar, firmly packed

- 3 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon

- 1/2 ½ cup chicken stock
- 2 cups milk, divided
- 1 lb. boneless skinless chicken thighs or breasts, cut into 1 inch chunks
- 2 tbs. flour
- 2 cups chopped asparagus or green beans
- 1 sweet red pepper, diced
Brioche

Knead the dough until the butter is incorporated and dough is smooth
- Combine and let stand until dissolved, about 5 minutes:
- 1 pkg. dry yeast
- 1/3 cup whole milk, warmed 105 – 115 degrees
- Add:
- 1 cup flour
- 3 eggs, lightly beaten
- 3 tbs. sugar
- 2 tbs. whole milk
- 1 tsp. salt
- Mix and gradually add:
- 1 3/4 1 ¾ cups bread flour
- Mix the first 5 ingredients until blended. Knead for 7 – 10 minutes, until the dough is smooth and elastic. Add:
- 12 tbs. butter
