- 2 eggs
- 1 graham pie crust
Vanilla Torten Sponge

Put the egg yolks, sugar, flour, oil, water and vanilla in a bowl and mix together with a wooden spoon
- 4 eggs, separated
- 125 grams sugar
- 125 grams self-raising flour
- 2 tbs. corn oil
- 3 tbs. boiling water

White Sauce

Salt and white pepper Heat butter in a pan, when melted, add flour and mix well
- 4 tbs. butter
- 5 tbs. flour
- 5 cups hot milk
- 1 onion

Ricotta and Fresh Plum Tart

- 1 lb. pasta frolla
- 2 egg yolks
- 1/2 ½ cup sugar
- 1 lb. fresh ricotta
- 1 tbs. lemon zest, grated
- 2 tsp. Maraschino liquor
- Orange extract
- 4 plums
- 3 tbs. apricot jam
- Powdered sugar
White Chocolate and Macadamia Nut Cookies

Preheat the oven to 350 degrees
- ¾ cup light brown sugar, packed
- ½ cup sugar
- 1 cup butter, softened
- ½ tsp. vanilla
- ½ tsp. almond extract
- 2 eggs
- 2 ½ cups flour
- 1 tsp. baking soda
- ½ tsp. salt
- 1 cup coarsely chopped nuts
- 1 cup white chocolate, cut into chunks
Sweet Tartlet Dough

Combine flour, sugar, and salt; cut in butter and work until the mix resembles coarse meals
- 1 cup and 2 tbs. cold butter, cut into pieces
- 3 cups flour
- ¾ cup icing sugar
- ½ tsp. salt
- 3 yolks
- 3 tbs. ice water
- 1 tsp. vanilla
Poured Fondant

- WATER 12 OZ.
- SUGAR 3#
- LIGHT CORN SYRUP 8 OZ.
Briacole with Pancetta

Season each steak, top with garlic and 4 slices pancetta; sprinkle with nuts and cheese
- 3 8oz. pieces flank steak, pounded
- Salt and pepper
- 3 tsp. minced garlic
- 12 paper thin slices of pancetta
- 3 tbs. pine nuts
- 3 tbs. grated cheese
- 5 tbs. parsley
- ¼ cup olive oil
- 1 Spanish onion, pureed
- ½ cup white wine
- 4 ½ lbs. plum tomatoes, pureed
- 5 basil leaves
Royal Icing

- 3 pkgs (8 oz/250 g) cream cheese , softened 3 pkgs
- 3/4 cup sugar 175 mL
- 3 eggs 3
- 1/3 cup lemon juice 75 mL
- 2 tsp vanilla 10 mL
- TOPPING
- 2 cups sour cream 500 mL
- 3 tbsp sugar 45 mL
- GLAZE
- 1/2 cup sugar 125 mL
- 2 tbsp corn starch 30 mL
- 3/4 cup water 175 mL
- 1/3 cup lemon juice 75 mL
- 1 egg yolk , beaten 1
- 1 tbsp butter 15 mL
