Combine the berries, sugar, and water in a pan
- 1 cup fresh or frozen blueberries
- 1 cup sugar
- ¼ cup water
- 3 tbs. water
- 3 tbs. tbs. cornstarch
Butterscotch Sauce

- ¼ cup water
- 2 tbs. light corn syrup
- 1 cup sugar
- ½ cup heavy cream
- 1 tsp. vanilla
- ¼ tsp. salt
Apple Blondies with Caramel Icing

Cream butter and brown sugar until smooth
- 2/3 cup butter, softened
- 2 cups packed brown sugar
- 2 eggs
- 1 tsp. vanilla
- 2 cups flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 cup apple, peeled, cored, chopped
- 1/2 cup walnuts, or pecans, chopped
- 1/2 cup butter
- 1 cup brown sugar, packed
- 1/4 cup milk
- 2 cups icing sugar, sifted

- ¼ cup light corn syrup

Marinated Bocconcini with Grilled Zucchini Salad and Prosiutto Julienne

Drain the boconcini of the liquid it came in
- 1 lb. boconcini
- 3 tbs. olive oil plus 3 tablespoons
- 1 tbs. chopped fresh thyme leaves
- 1 tbs. chopped fresh oregano leaves
- 1/4 tsp. crushed red chili flakes
- Salt and pepper
- 2 medium zucchini, sliced lengthwise into 1/8 inch strips
- Zest of 1 lemon
- 1 bunch chives, ends removed
- 2 medium plum tomatoes, cut into 1/4 inch dice, seeds and liquid reserved
- 2 tbs. wine vinegar
- 1 bunch Italian parsley, finely chopped to yield 1/4 cup
- 1/4 lb. prosciutto, sliced paper thin
Oven Roasted Eggplant

Preheat the oven to 400 degrees
- 1 medium sized eggplant
- 1 large garlic clove
- Salt and pepper
- 1/4 ¼ tsp. cumin
- 4 plum tomatoes
- 1/2 ½ pint cherry tomatoes
- 2 onions
- 2 tsp. olive oil
- 1/4 ¼ cup red wine
- 1/4 ¼ cup chopped fresh parsley
- 2 green onions, thinly sliced
Chicken Cheese Stuffed Potatoes

Heat oven to 350 degrees. Cut each potato lengthwise into halves, scoop out centres leaving 1/2 inch border
- 2 large baking potatoes, baked
- 4 tbs. butter
- 2 large whole chicken breasts, deboned and skinned
- 3/4 tsp. dried Italian herbs
- 1/2 tsp. salt and pepper
- 8 tbs. shredded cheese (American, Cheddar, or Monterey Jack)

- ¼ tsp. baking soda
- ¼ tsp. salt
- ¾ stick butter, cut into pieces
- 3 oz. unsweetened chocolate, finely chopped
- 1 cup packed light brown sugar
- 2 large eggs, at room temperature
- 1 tsp. vanilla
- 3 oz. semi-sweet chocolate, coarsely chopped
- 3 oz. white chocolate, coarsely chopped
- 2 3oz packages cream cheese, at room temperature
- 1/3 cup icing sugar

- 1 egg, lightly beaten with 1 tbs. milk
