Chicken Cheese Stuffed Potatoes

- 2 large baking potatoes, baked
- 4 tbs. butter
- 2 large whole chicken breasts, deboned and skinned
- 3/4 tsp. dried Italian herbs
- 1/2 tsp. salt and pepper
- 8 tbs. shredded cheese (American, Cheddar, or Monterey Jack)

Step 1
Heat oven to 350 degrees.
Cut each potato lengthwise into halves, scoop out centres leaving 1/2 inch border. Brush halves with butter and arrange on a baking sheet and place in a preheated oven. Bae until shells are hot, 5-7 minutes.
Cut chicken in half and flaten each piece. Melt remaining butter over medium heat and add chicken, herbs, salt, and pepper. Coo until chicken is golden, about 3 - 4 minutes per side. Cut chicken into 1/2 inch strips.
Sprinkle 1 tbs. of the cheese onto each potato half; top each with 1/4 of the chicken and 1 tbs. cheese. Bake until cheese melts, about 5 minutes longer.
Serve hot.
