Oven Baked Penne with Eggplant

Stack eggplant slices in a colander, each piece sprinkled with sea salt
- 2 pounds eggplant, sliced 1/2-inch thick
- Sea salt
- 3 tablespoons extra-virgin olive oil, plus 1 tablespoon, plus 2 tablespoons
- 1 pound penne or other short pasta
- 2 cups basic tomato sauce, recipe follows
- 1/2 cup fresh bread crumbs
- Salt and pepper
- 1/3 cup grated caciocavallo or pecorino
- 4 sprigs fresh basil, roughly torn
- Tomato Sauce
Double Chocolate Fiancier Cake

Preheat oven to 350 degrees
- 3/4 cup butter
- 1/2 cup flour
- 1/4 cup cocoa powder
- 1/8 tsp. salt
- 6 egg whites, at room temperature
- 3/4 ucp sugar
- 1 tbs. light corn syrup
- 1 tsp. vanilla
- 1 cup finely ground blanched almonds
- 4 ounces semisweet chocolate
Orange Chiffon Cake

Preheat the oven to 325 degrees and prepare a 10 inch tube pan
- 6 eggs, separated and at room temperature
- 1 egg white
- 225 grams sifted cake flour
- 300 grams superfine sugar
- 1 tbs. baking powder
- ½ tsp. salt
- ½ cup oil
- ¾ cup orange juice
- 2 tbs. orange zest
- 1 tsp. vanilla
- ¾ tsp. cream of tartar
Whipped Frosting

Pour milk into bowl add pudding mix and sugar
- 1 small pkg instant pudding mix – any flavor
- 1 Cup milk
- ¼ cup powdered sugar
- 8 oz Cool Whip – thawed
Pizza Toppings

Bake until crisp
- Pizza Marguerite – Layer the pizza with 1 ¾ cups diced plum tomatoes, ½ cup coarsely chopped basil, 2 – 3 tbs. parmesan cheese, 2 tbs. olive oil, season with salt and pepper, parmesan or mozzarella cheese
- Pizza Romano – Layer the pizza with 1 ¼ cups thinly sliced mushrooms, 2 green peppers that have been thinly sliced, 1 onion thinly sliced
- Italian Sausage and Onions- Top the pizza with 12 oz. sausage casings removed browned. Thinly sliced one onion and scatter over the pizzas
- Mushroom, Sausage and Pepperoni – Layer the pizza with 8 oz cooked sausage, 1 ¼ cups sliced mushrooms, and 40 pepperoni slices
- White pizza- Boil potatoes and slice thinly while still warm. Sprinkle with salt and pepper and drizzle with olive oil.
Bailey Frozen Chocolate Chunk Mousse Cake

ESPRESSO CAKE: Position a rack in the lower third of the oven and preheat to 350ºF
- ESPRESSO CAKE:
- 1/4 cup ground espresso
- 1/2 cup water
- 1 cup cake flour (not self rising)
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 4 tablespoons unsalted butter
- 1/2 cup + 2 tbl. sugar
- 2 large eggs
- 1/2 teaspoon vanilla
- 1/4 cup sour cream
- CHOCOLATE CHUNK MOUSSE:
- 5 ounces bittersweet chocolate, coarse chopped
- 1/4 cup + 2 tbl milk
- 1/4 cup sugar
- 1/8 teaspoon salt
- 2 teaspoons vanilla
- 1/2 cup Bailey's irish Cream
- 6 ounces mascarpone cheese, softened
- 1 cup heavy cream
- 1/4 cup hazelnuts, toasted, coarse chopped
- 4 ounces bittersweet chocolate, cut in chunks
- GARNISH:
- 3/4 cup heavy cream
- 2 tablespoons Irish cream liqueur
- 1 tablespoon powdered sugar
- 2 ounces bittersweet chocolate, cut up
Apple Strudel Filling

Combine the apples, sugar, cinnamon, and peel
- 8 large green apples – 5 lbs. peeled, cored, and cut into ½ inch slices
- ¾ cup sugar
- 2 tsp. cinnamon
- 1 tbs. grated lemon peed
- ¾ cup ground almonds
Rice and Mushroom Casserole

Heat oven to 350 degrees, over medium heat cook the rice until golden, about 5 minutes
- 1/2 ½ cup rice
- 4 tbs. butter
- 1/4 ¼ lb. sliced mushrooms
- 1/2 ½ cup chopped onion
- 1/2 ½ cup chopped celery
- 1 1/4 1 ¼ cups water
- 1 cube beef bouillon
- Salt
Apple Filling Apple Pie

1. Peel and core the 8 apples
- Pie Dough
- GRANNY SMITH APPLES 4 each
- GOLDEN DELICIOUS 4 each
- BUTTER 3 ounces
- SUGAR 8 ounces
- CINNAMON 1 tsp.
- NUTMEG 1/4 tsp.
- FLOUR 1 Tbsp.

Heat oven to 325 degrees. In a food processor grind almonds and sugar into a fine powder
- ½ cup whole almonds (can use any type of nut)
- 1 ½ tsp. Superfine sugar
- 1/3 cup flour
- ½ cup and 2 tbs. potato starch
- ½ cup and 2 tbs. icing sugar
- 7 tbs. unsalted butter, softened
- 1 large egg, lightly beaten (only ½ is needed)
- 1/8 tsp. Almond extract
