Strawberry Chocolate Chip Muffins

Preheat oven to 350 lightly grease 12 muffin cups or line with muffin papers
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 3/4 cup granulated sugar
- 1/2 cup butter, cold and cut into cubes
- 1 egg
- 1 cup heavy cream
- 1 teaspoon vanilla
- 1 cup diced strawberries
- 1/2 cup mini chocolate chips
Mushroom Chicken

1lb boneless skinless chicken breasts cornstarch (for dusting) 1 tablespoon vegetable oil 1 tablespoon sesame oil
- 1 lb boneless skinless chicken breasts
- cornstarch (for dusting)
- 1 tablespoon vegetable oil
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon balsamic vinegar
- 2 garlic cloves (minced)
- 1 teaspoon ground ginger
- 1 package fresh button mushrooms
- 4 small zucchini
The Perfect Rainy Day BBQ Ribs

1. Combine all of the dry ingredients (from brown sugar to cayenne) in a small bowl
- 1 rack of baby back pork ribs (2-3 pounds)
- 3 tbsp. water
- 1 sweet onion, chopped
- 1 garlic clove, sliced
- 3 tbsp. brown sugar
- 1 tbsp. onion powder
- 1 tbsp. garlic powder
- 1 tbsp. chili powder
- 1 tbsp. paprika
- 1 tsp. salt
- 1 tsp. cumin
- 1 tsp. black pepper
- 1 tsp. white pepper
- 1/2 tsp. oregano
- 1/2 tsp. cayenne
Cajun Popcorn

In a large skillet with a lid (we like our dutch oven for this), heat the oil over medium-high heat
- 2 tablespoons vegetable oil
- 1/3 cup popcorn kernels
- 2 tablespoons butter
- 1 teaspoon hot sauce (we love Louisiana)
- 1 teaspoon Cajun seasoning
- 1/4 cup grated Parmesan cheese (feel free to add more if desired)
The BLT Club Sandwich:

Heat a large griddle to 375 degrees
- 1 pound Bacon, cooked
- 8 slices of Bakery Bread or Sourdough
- 8 slices of Tomato
- 8 slices of Turkey
- 4 slices of Cheese
- 4 pieces of Lettuce
- Red Onion, thinly sliced
- Mayo, to taste
- Butter, for buttering bread
Spicy Rice and Corn Casserole

Prepared the rice according to the package directions except eliminate the oil
- 1 (8 ounce) box of Zatarain's
- New Orleans Style Yellow Rice
- 1 (11 ounce) can of Mexican corn, undrained
- 1 can of Campbell's Cream of Celery Soup
- 2 tablespoons of chopped jalapenos
- 1 stick of unsalted butter, melted
- Pinch of kosher salt
- 5 turns of the pepper grinder
- Pinch of Zatarain's Big & Zesty Original Creole Seasoning,
- Slap Ya Mama or your favorite Cajun seasoning
- 1 overflowing cup of shredded
- pepper jack cheese, divided
Cajun Shrimp Pizza

Preheat the oven and a pizza stone at 500˚ F for at least 30 minutes
- Pizza dough
- Olive oil, for brushing
- 1/3 cup pizza sauce
- 1/2 lb. medium shrimp, peeled and deveined
- 2 tsp. olive oil
- Cajun seasoning, to taste
- 1 oz. grated Romano cheese
- 2-3 oz. shredded mozzarella cheese
- 1 small red bell pepper, roasted, peeled and chopped
- 1/4 cup red onion, chopped
- 1/4 cup chopped green onions
CORN CHOWDER WITH CHILLIES

(Carefully) slice the corn kernels off the cob
- 2 slices Bacon, Cut Into 1/2-inch Pieces (or Smaller)
- 2 Tablespoons Butter
- 1-1/2 whole Yellow Onion, Diced
- 5 ears Corn, Shucked (about 4 Cups)
- 2 whole Chipotle Peppers In Adobo Sauce, Finely Diced
- 1 whole 4-ounce Can Diced Green Chilies
- 32 ounces, fluid Low Sodium Chicken Broth
- 1-1/2 cup Heavy Whipping Cream
- 1/2 teaspoon Kosher Salt (more To Taste)
- 3 Tablespoons Corn Meal OR Masa
- 1/4 cup Water
Crockpot Italian Chicken

Place the chicken in a crockpot and sprinkle Italian dressing over it
- 4 chicken breasts
- 1 packet dry Zesty Italian dressing (Regular is fine but I like zesty better. Sometimes I use a packet and a half.)
- 1 (8 oz) package cream cheese, softened
- 1-2 cans cream of chicken soup (depending how cream cheesy you want it)
Glazed Pork Chops and Apples

Heat 2 tablespoon oil in nonstick skillet over medium-high heat
- 2 tablespoons oil
- 8 boneless pork chops, 1/2 inch thick
- 1 cup apple juice
- 1/2 cup brown mustard
- 1/2 cup packed brown sugar
- 1/4 teaspoon fresh rosemary needles, crushed
- 2 green apples or 2 red apples, cut into small chunks
- salt and pepper
