No Fuss Peel and Eat Shrimp

1. Preheat oven to 450 degrees
- 3 sub rolls, 6'' long, split in half horizontally
- 1 lb lean ground beef
- 2/3 c. French Fried Onions
- 3/4 c. Panko Bread Crumbs
- 1 egg, beaten
- 1/4 c. milk
- 3 Tbsp Ketchup
- 1 Tbsp Worcestershire Sauce
- 1/2 tsp garlic powder
- Topping
- 3 Tbsp Ketchup
- 1 Tbsp Yellow Mustard
- 2 c. cheddar cheese, shredded
Iced Peanut Butter and Jelly Sheet Cake

1. Preheat oven to 350 degrees F
- 1 box yellow cake mix
- 1/2 cup milk or buttermilk
- 4 large eggs
- 1/2 cup vegetable oil
- 1/2 cup sour cream
- 3.9 ounce box vanilla instant pudding mix
- 1/2 cup creamy peanut butter
- 1 cup strawberry jelly
- 2 cups powdered sugar
- 1/4 cup heavy cream (plus more to thin out if needed)

1. Beat the egg. Season chicken cutlets with salt and pepper
- 4 boneless skinless chicken breasts, pounded thin
- 1 1/2 cups crushed Ritz crackers
- 1 egg
- Canola oil
- 2 tablespoons butter
- Half of an onion, finely chopped
- 2 cloves garlic, minced
- 2 ounces diced jarred pimientos
- 1 8-ounce package cream cheese, softened
- 1/2 to 1 cup milk or chicken stock
- 1/2 cup shredded cheddar cheese
- Salt and pepper to taste

For the Chicken Salad: In a medium bowl, combine the sour cream, lime juice, salt, pepper, paprika, cumin, and cila...
- 2/3 cup sour cream (next time, low fat)
- 3 tablespoons lime juice (we only had lemon juice, so that's what we used. worked out fine)
- 1/2 – 3/4 teaspoon salt
- 1/4 – 1/2 teaspoon black pepper
- 1/4 teaspoon paprika
- 1/4 teaspoon cumin
- 1 - 2 tablespoon minced cilantro (whenever there's a recipe with cilantro, I always use waaaay more than the recipe calls for. I love cilantro!)
- 2 – 3 green onions, sliced thin
- 1 stalk celery, diced (omitted)
- 2 cups poached, diced or shredded chicken (cooked w/little olive oil, then chopped in my food processor)
- 2/3 cup black beans, I like Bush's brand best
- 1/3 cup diced red bell pepper
- 1/3 cup corn kernels
- For the Wraps
- Santa Fe Chicken Salad
- Burrito Sized Tortillas
- Salad Greens or Baby Spinach (didn't use)

In a large skillet, saute mushrooms in olive oil for about 5 minutes
- 8 oz mushrooms
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 24oz jar pasta sauce
- 16oz jar alfredo sauce
- 16 oz penne pasta, cooked
- 2 cups shredded mozzarella
- 1 cup shredded parmesan

- 6 slices thick-cut applewood smoked bacon, cut into 1/2-inch pieces
- 4 cloves garlic, finely chopped

- 1 tablespoon ground cumin

- 1 pound ground sirloin (I wouldn’t do ground chuck for this; you want something less fatty)
- Salt and pepper to taste
- Montreal steak seasoning to taste
- 1 medium onion, chopped
- 1 can diced tomatoes, drained
- 1 tablespoon ketchup
- 1 tablespoon mustard
- Dash of Worcestershire sauce
- Lettuce leaves
- Shredded cheddar cheese
- Pickles
- Thousand Island dressing for serving, if desired
