Emeril's Hurricane Cocktails

Mix all the ingredients in a cocktail shaker, and shake to dissolve the sugar
- 2 ounces light rum
- 2 ounces dark rum
- 1 ounce grenadine, or passion fruit syrup
- 1 ounce fresh orange juice
- 1 ounce sour mix, or fresh lime juice
- 1 teaspoon superfine sugar
- Orange wedges, for garnish
Paula's Easy BBQ Chicken

Prepare a medium-hot grill or preheat the broiler
- 1 (3 1/2-pound) chicken, cut into 8 pieces
- Salt and freshly ground black pepper
- 2 cups bottled sauce or Easy BBQ Sauce, recipe follows
Vitamix: Sweet and Sour Sauce

1. Place all ingredients into the Vitamix container in the order listed and secure lid
- 1/4 cup (60 ml) mirin
- 1/4 cup (60 ml) rice wine vinegar
- 12-ounce (340 g) jar apricot jelly
- 2 teaspoons fresh ginger, minced
- 2 teaspoons cornstarch
- 2 scallions, thinly sliced for garnish
Neely's Spicy Potato Wedges

Preheat oven to 450 degrees F
- • 3 large russet potatoes , peeled and cut into 8 wedges
- • 1/4 cup butter, melted
- • 1/4 cup olive oil
- • 1 tablespoons seasoned salt
- • 1/2 teaspoon cayenne pepper
- • 1 TBSP freshly chopped parsley leaves
- • 3 TBSP grated Parmesan, plus for garnish
- • Salt
Swirled Cheesecake Brownies

1.4 ounces reduced-fat cream cheese, (Neufchatel) 2
- 1.4 ounces reduced-fat cream cheese, (Neufchatel)
- 2.1 /4 cup sugar
- 3.1 large egg
- 4.1 tablespoon all-purpose flour
- 5.1 tablespoon nonfat plain yogurt
- 6.1 /2 teaspoon vanilla extract
- 7.2 /3 cup whole-wheat pastry flour
- 8.1 /2 cup unsweetened cocoa powder
- 9.1 /4 teaspoon salt
- 10.1 large egg
- 11.2 large egg whites, or 4 teaspoons dried egg whites (see Ingredient note), reconstituted according to package directions
- 12.1 1/4 cups packed light brown sugar
- 13.1 /4 cup canola oil
- 14.1 /4 cup strong (or prepared instant) coffee, or black tea
- 15.2 teaspoons vanilla extract
Roasted Potatoes and Tomatoes

Put a baking sheet in the oven and preheat to 450 degrees F
- 1 1/2 pounds large red-skinned potatoes lengthwise into eighths
- 2 tablespoons olive oil,
- 1 pint cherry tomatoes,
- 3 sprigs rosemary,
- 3 smashed garlic cloves
- salt and pepper
Soy-Glazed Salmon

1.Preheat oven to 400 degrees
- 1/4 cup packed light-brown sugar
- 1/4 cup olive oil
- 3 tablespoons soy sauce
- 2 tablespoons fresh lemon juice
- 2 tablespoons dry white wine, or water
- 2 pounds salmon fillet
- Lemon wedges, for serving
Paula's Banana Coffee Muffins

Preheat oven to 350 degrees F
- 1/3 cup melted butter
- 4 ripe bananas, smashed
- 3/4 cup sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 1/2 tablespoons strong coffee
- 1 teaspoon baking soda
- Pinch salt
- 1 1/2 cups all-purpose flour
- 1 cup chopped pecans, toasted or raw
Breakfast Sandwich

Cook and stir egg whites in a skillet over medium heat until scrambled and done to your liking
- 4 egg whites/substitutes
- 1/2 whole-grain or Ezekiel English muffin
- 3 slices tomato
- 1 dash Mrs. Dash
- 3 tbsp salsa
HSN Sugar Butter cookies

- 1 egg + 1 egg yolk
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
