Guilt Free Blueberry Waffles

1. In a large bowl, combine the flour, sugar, baking powder and salt
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg yolk
- 1/4 cup fat-free milk
- 1/4 cup orange juice
- 1 tablespoon butter, melted
- 1 teaspoon grated orange peel
- 1/8 teaspoon orange extract
- 4 egg whites
- 1 cup fresh blueberries
- 1 tablespoon confectioners' sugar
Paula Deen's Herb-Fried Chicken

1.Sprinkle chicken pieces with salt and pepper
- 1 3-lb. chicken, washed and cut into 8 serving pieces
- 2 cups all-purpose flour
- 1/2 cup snipped fresh sage or parsley
- 1 tsp. cracked black pepper
- 3 eggs
- 1/2 cup milk
- Peanut oil for frying
- Small fresh sage leaves
- Lemon wedges
Comfort Food Diet Chicken-Pineapple Fajitas

1. Preheat oven to 350 degrees F
- 8 6-inch flour tortillas
- 4 1-inch slices peeled fresh pineapple (about half)
- 1 lb. skinless, boneless chicken breast halves
- 2 small red or orange sweet peppers, seeded, cut in strips
- 2 tsp. Jamaican jerk seasoning
- 1/8 tsp. ground black pepper
- 1 Tbsp. cooking oil
- Fresh cilantro and lime wedges
Creamy Parmesan

Mix all ingredients and pour over pasta salad
- Mix 1/4 cup mayonniase
- 1/4 cup sour cream
- 1 tablespoon lemon juice
- 1/4 teaspoon finely grated garlic
- 3/4 cup grated parmesan
- Salt
- Pepper to taste
Taco Seasoning

Mix them all together and add to browned ground beef with 3/4 C
- ■1 Tbs. chili powder
- ■2 tsp. onion powder, or dried onion flakes
- ■1 tsp. ground cumin
- ■1 tsp. paprika
- ■1 tsp. garlic powder
- ■1 tsp. ground oregano
- ■1 tsp. sugar
- ■1/2 tsp. salt
Salad: Macaroni Salad

1. Cook macaroni according to package directions
- 8 oz. dried elbow macaroni (2 cups)
- 1/2 lb. green beans, trimmed and cut into 1-inch pieces (2 cups)
- 1/4 cup lemon juice
- 1 Tbsp. Dijon-style mustard
- 1 tsp. kosher salt
- 1 / tsp. freshly ground black pepper
- 1/3 cup olive oil
- 1/3 cup plain yogurt or dairy sour cream
- 5 oz. cubed cheddar cheese (1-1/4 cups)
- 1 cup fresh spinach leaves
- 1 large tomato, seeded and chopped (1 cup)
- 1/2 cup chopped green onions
- 1 Tbsp. snipped fresh tarragon or 12 tsp. dried tarragon, crumbled

Preheat oven to 375F. Mix all filling ingredients in a 1-1/2 quart baking dish until well combined
- Filling:
- 4 cups fresh, peeled peach slices
- 1 cup sugar
- 1/4 tsp cinnamon
- 1 tsp lemon juice
- 1-1/2 tsp corn starch
- Topping:
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup light brown sugar
- 1/4 tsp cinnamon
- 1 tsp baking powder
- 4 Tbsp butter, melted
- 1/4 cup milk
