Potato Kielbasa Skillet

Smokey kielbasa steals the show in this hearty home-style all-in-one meal
- 1 pound red potatoes, cubed
- 3 tablespoons water
- 3/4 pound smoked kielbasa or Polish sausage, cut into 1/4-inch slices
- 1/2 cup chopped onion
- 1 tablespoon olive oil
- 2 tablespoons brown sugar
- 2 tablespoons cider vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon dried thyme
- 1/4 teaspoon pepper
- 4 cups fresh baby spinach
- 5 bacon strips, cooked and crumbled
Banana Cream Cookies

- 1 cup butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 banana, smashed
- 3.4 oz package banana cream instant pudding mix
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 2 cups white chocolate chips
One Skillet Sweet Potato Burrito Bowl

A dinner made in just one skillet – sweet potato burrito bowls
- 1 pound (heaping 2 cups) sweet potatoes
- 3 tablespoons olive oil, separated
- 1 cup chopped sweet bell peppers (I used miniature assorted red, yellow, and orange)
- 1 cup white rice
- 1 can (14.5 ounces) petite diced tomatoes
- 1 can (15.25 ounces) black beans
- 1 cup frozen corn
- 1/2 teaspoon minced garlic
- 1/2 teaspoon chili powder
- 1 teaspoon cumin
- 2 cups vegetable or chicken broth (vegetable for a vegetarian meal)
- 2 tablespoons fresh lime juice, optional
- 1 and 1/2 cup shredded cheddar cheese
- Sour cream, for topping
- Optional: chopped cilantro, chopped avocado or guacamole, 1 small roma tomato, chopped
Baked Funfetti Donuts (Birthday Donuts)

Instructions Preheat oven to 350º F
- Funfetti Donuts:
- 2 eggs
- 4 Tbsp. butter, melted
- 1 tsp. vanilla extract
- 1/3 cup Truvia Baking Blend (or 2/3 cup sugar)
- 2 cups white whole wheat flour
- 1/2 tsp. salt
- 1 1/2 tsp. baking powder
- 1 cup skim milk (can also use almond, soy, etc)
- 1/4 cup rainbow sprinkles
- Glaze:
- 2 cups powdered sugar
- 1 tsp. vanilla
- 4 Tbsp. skim milk
- Pink food coloring (optional)
- Extra rainbow sprinkles, for topping (optional)
