Cheery Cheesecake Santa Hats by Pioneer Woman

- Red Velvet Crust:
- Nonstick cooking spray, for the pan and parchment
- Two 14.3-ounce packages vanilla sandwich cookies, such as Golden Oreos (72 cookies)
- 2 sticks (1 cup) butter, melted
- 1 tablespoon red gel dye (I use AmeriColor super red 120)
- Filling:
- Three 8-ounce packages cream cheese, softened
- 1 1/2 cups granulated sugar
- 1 1/2 teaspoons vanilla extract
- 4 large eggs
- 1/2 cup sour cream
- Whipped Mascarpone Cream:
- 1 cup heavy cream
- 1 cup mascarpone, at room temperature
- 1/2 cup confectioners' sugar
- Santa Hats:
- 15 large plump strawberries, hulled
- Confectioners' sugar, for sifting

- 19.5-oz. box chocolate fudge brownie mix
- 8-oz. package cream cheese, softened
- 14-oz. can sweetened condensed milk
- 1/2 cup creamy peanut butter
- 12 oz. Reese’s Pieces candy
- 12-oz. bag milk chocolate chips
- 3 tablespoons whipping cream
- 12 large Reese’s Peanut Butter Cups, chopped

- 12 tablespoons (1 1/2 sticks) unsalted butter, at room temperature
- 2/3 cup granulated sugar
- 2/3 cup light brown sugar, packed
- 2 extra-large eggs, at room temperature
- 2 teaspoons pure vanilla extract
- 1 cup buttermilk, shaken, at room temperature
- 1/2 cup sour cream, at room temperature
- 2 tablespoons brewed coffee
- 1 3/4 cups all-purpose flour
- 1 cup good cocoa powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon kosher salt

- Chopped salted peanuts, to decorate, optional
- 1 cup confectioners' sugar
- 1 cup creamy peanut butter
- 5 tablespoons unsalted butter, at room temperature
- 3/4 teaspoon teaspoon pure vanilla extract
- 1/4 teaspoon kosher salt
- 1/3 cup heavy cream
