- Cheesecake:
- 16 oz. cream cheese (room temperature)
- 3/4 cup granulated sugar
- 1 tablespoon flour
- 3 eggs
- 1 teaspoon vanilla extract
- Carrot Cake:
- 3/4 cup vegetable oil
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla
- 1 cup flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 generous pinch of salt
- 1 (8 1/2 ounce) can crushed pineapple, well drained with juices reserved
- 1 cup grated carrots
- 1/2 cup flaked coconut
- 1/2 cup chopped walnuts
- Pineapple Cream Cheese Frosting:
- 2 ounces cream cheese, softened
- 2 tablespoons butter, softened
- 1 3/4 cups powdered sugar, sifted
- 1/2 teaspoon vanilla
- 1 1/2 tablespoons reserved pineapple juice

- 1 onion
- 2 bell peppers (red, green or orange...you choose)
- 6 stalks celery
- salt and pepper to taste (again with the "you choose")
- 3/4 C fresh orange juice
- 1/4 C soy sauce
- 1/2 t ginger
- 2 t rice vinegar
- 1/2 C brown sugar
- 1/2 t sesame oil
- pinch red pepper flakes
- 2 T corn starch
- 1 C chicken broth
