Easy Pepperoni Pizza Bites

Today we are taking a little break from Chocolate, and dessert, and sugar
- Red Sauce:
- 1 loaf french bread (I used 2 medium sized loaves of my Homemade French Bread)
- 1/4 C softened butter
- 2 small packages pepperoni
- 2 C mozzarella cheese, shredded
- 1 1/2 C Parmesan cheese, shredded
- Italian Herb Seasoning Grinder (from McCormick)
- Recipe adapted from Mel's Kitchen Cafe
- 1 -14.5 oz can Italian Stewed Tomatoes
- 1 small can tomato paste
- 1 t sugar
- 1 t dried oregano
- 1 t dried basil
- 1/2 t garlic powder
- 1/2 t salt
- 1/2 t lemon juice
- pinch red pepper flakes

- CRUST
- 1 cup (134g) oreo cookie crumbs
- 2 tbsp butter, melted
- Cheesecake FILLING
- 12 ounces (339g) cream cheese, room temperature
- 1/2 cup (104g) sugar
- 2 tbsp (14g) natural unsweetened cocoa powder
- 1/4 cup (58g) sour cream
- 1/2 tsp vanilla extract
- 2 eggs
- 4 oz chocolate, melted (I used dark chocolate)
- Chocolate GANACHE
- 3 oz semi sweet chocolate chips
- 1/4 cup heavy whipping cream
- WHIPPED CREAM
- 3/4 cup (180ml) heavy whipping cream, cold
- 3 tbsp (22g) powdered sugar
- 3 tbsp (14g) natural unsweetened cocoa powder
- 1/2 tsp vanilla extract
- Mini chocolate bars, for topping
