Pumpkin Spice Latte Cupcakes

To make the cupcakes, preheat the oven to 350°F
- 2 2/3 cups all-purpose flour
- 3 tbsp. espresso powder
- 2 tsp. baking soda
- 2 tsp. baking powder
- 1 tsp. ground cinnamon
- 1/8 tsp. grated nutmeg
- 1/8 tsp. ground cloves
- 1 tsp. salt
- 1 (15 oz.) can pumpkin puree
- 1 cup sugar
- 1 cup brown sugar
- 1 cup canola or vegetable oil
- 4 large eggs
- 1/2 cup coffee or espresso, for brushing
- 2 1/4 cups heavy cream, chilled
- 1/4 cup confectioners' sugar
- Ground cinnamon
- Caramel sauce
Chocolate Chip Kiss Cookie

1. Beat butter, sugars and vanilla until well blended
- 1 9oz. bag chocolate kisses (unwrapped and set aside)
- 1 cup butter, softened
- 1/3 cup sugar
- 1/3 cup brown sugar, packed
- 1 tsp. vanilla
- 2 cups flour
- 1 cup mini semisweet chocolate chips

Smores Pie

Preheat oven to 350° Spray a 9" pie pan with baking spray
- 6 Regular sized Hershey Bars, broken into pieces
- 3/4 cup white sugar
- 1 cup all purpose flour
- 1 tsp. baking powder
- 1/2 cup salted butter (1 stick)
- 1 egg
- 1 tsp vanilla
- 1 cup graham cracker crumbs
- 1 7oz container of Marshmallow Creme
- wax paper
Pumpkin Creme Brulee Tarts

These tarts can be baked and chilled up to a day in advance, but should be bruleed right before serving
- 1 recipe Tender Tart Dough, shaped into a log and chilled
- 6 ounces cream cheese, room temperature
- 3/4 cup packed dark brown sugar
- 6 large egg yolks
- 3/4 cup pure pumpkin puree
- 1 teaspoon finely grated fresh ginger
- 1/2 teaspoon ground cinnamon
- 3 tablespoons brandy
- granulated sugar, for brulee-ing
Almond Joy

- 1 pkg. Coconut
- 2 C. Powdered Sugar
- 1 t. Vanilla

In a saucepan combine the milk, cream, and 1/2 cup sugar over medium heat
- 2 cups whole milk
- 1 cup heavy cream
- 1/2 cup sugar, plus 1/4 cup
- 4 egg yolks
- 1/2 teaspoon vanilla extract
- 1/2 cup chocolate-hazelnut spread (recommended: Nutella)
- 1/2 cup toasted hazelnuts, crushed, for garnish
Pate Brisee

Pulse flour, sugar, and 1 teaspoon salt in a food processor until combined
- 2 3/4 cups all-purpose flour
- 1 tablespoon sugar
- Salt
- 2 sticks plus 2 tablespoons cold unsalted butter, cut into small pieces
- 1/3 to 2/3 cup ice water
Tzatziki

Spoon yogurt into sieve lined with cheesecloth or coffee filter set over bowl; cover and refrigerate overnight
- 1 container (16 ounces) plain lowfat yogurt
- 1/2 English (seedless) cucumber, not peeled, seeded and finely chopped plus a few thin slices
- 1/1-2 teaspoons salt
- 1 to 2 garlic cloves, chopped (needed 2 more)
- 1 tablespoon chopped fresh mint or dill plus additional sprigs
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon red wine vinegar
