Baked Eggs with Asparagus & Ham

1.Heat oven to 350° F. Heat the oil in a large skillet over medium-high heat
- 1 tablespoon olive oil
- 1 bunch asparagus, cut into 1-inch pieces
- 1 shallot, chopped
- 6 large eggs
- 1 1/2 cups half-and-half
- kosher salt and black pepper
- 4 cups torn baguette
- 1 cup Gruyère, grated (4 ounces)
- 4 ounces ham, roughly chopped
Potato Tuna Croquettes

- 2 tbsp oil
- 1 can tuna (170g) drained
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp chilli powder

- 1 to 2 cups bread crumbs
- 1 egg, lightly beaten
- Oil for deep-frying
- salt and pepper to taste

- 1/4 teaspoon pure vanilla extract
- 3/4 cup plus 1 tablespoon all-purpose flour
- 1/3 cup unsweetened Dutch-process cocoa powder, sifted

- dry ingredients:
- 1 cup flour
- 1 cup wheat bran
- 4 tsp dry milk powder
- 1/4 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- "liquid" ingredients:
- 1/3 cup brown sugar (it called for dark, but all I had was light)
- 1/4 cup honey
- 2 Tbsp molasses
- 1/4 cup vegetable oil
- 1 egg
- 1/2 cup water
- 2 Tbsp grated orange zest (the orange flavor is a little overpowering, I'd probably reduce this to 1 Tablespoon or maybe even 2 teaspoons)
- Glaze:
- 3 Tbsp sugar
- 3 Tbsp brown sugar, packed
- 3 Tbsp butter (very soft or slightly melted - I put this whole mixture on top of the fridge while I did the rest and it worked really well)
- 2 Tbsp honey
- 2 tsp water

- 1/2 cup ketchup, plus 1/4 cup
- 2 tablespoons plus 1 teaspoon Worcestershire sauce

- 2/3 cup Breadcrumbs
- 1 pound ground chuck
- 1/2 pound pork sausage (such as breakfast sausage)
- 1/2 pound ground veal

A charlotte alternates sponge cake and mousse, custard or cheesecake
- I'm offering my charlotte tiramisu recipe. Keep in mind this was made for work so I could not use alcohol. Once complete the inside is a beautiful marbling of cream and chocolate.
- 8 egg yolks
- 1 cup sugar
- 1/2 cup dark rum (I substituted with rum extract)
- 1/2 cup cold water
- splash of Amaretto (I substituted with almond extract)
- 2 1/2 lbs. mascarpone
- 36 ladyfingers
- 2 cups coffee reduction or espresso (I used instant espresso powder without the kahlua)
- splash Kahlua
- chocolate shavings (optional)
