Spinach and Chicken Cheese Spread

- 1 - 8 oz cream cheese, room temperature
- 1/2 pkg frozen chopped spinach, thawed
- 1/4 cup chopped onion (i fry it)
- 1/4 - 1/2 cup roasted sweet red pepper (or sauted red pepper with onions)
- 1 - 1 1/2 cup cooked chicken breast (with boulion cube, boiled)
Zeppole (St. Joseph's Day fritter)

1. Preheat oven to 400 degrees
- Zeppole :
- 1 c water
- 1 c (2 sticks) butter
- 1/4 tsp salt
- 1 c all purpose flour
- 4 eggs
- 1 Tbsp sugar
- 1 Tbsp lemon rind, grated
- 1 tsp orange peel, grated
- 16 marashino cherries
- RICOTTA CREAM FILLING:
- 1 lb ricotta cheese
- 2 Tbsp grated chocolate
- 1 Tbsp grated orange rind
- 2 tsp almond extract
- 3 Tbsp milk
- sugar, to taste

- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 c plus sugar, plus more for sprinkling
- 1/2 c (1 stick) unsalted butter, room temperature
- zest of 2 lemons, finely grated
- 1 c. ricotta cheese
- 1 large egg
- 1 tbsp fresh lemon juice
- 1/2 tsp vanilla extract

- 1 cup chopped walnuts (optional)

- 1/2 tsp cream of tartar
- 1 tsp salt
- 1 cup butterscotch chips
- 2 Tbsp sugar
- 1 tsp cinnamon
- dash nutmeg
