Jam-Filled Frangipane Tartlets

Almond flavor pairs well with many types of fruit
- For the pastry:
- 1 1/4 1 1/4 1/4 cups all-purpose flour
- 1/3 1/3 1/3 cup confectioners' sugar
- 1/2 1/2 1/2 tsp. salt
- 10 10 1/4 Tbs. (1 1/4 sticks) chilled unsalted butter, cut into pieces
- 2 2 1 egg yolks, lightly beaten with 1 Tbs. water
- For the frangipane:
- 8 8 8 Tbs. (1 stick) unsalted butter
- 1/3 1/3 1/3 cup firmly packed almond paste (or make your own, recipe follows)

Heat a large braising pot over medium-high heat
- 4 pounds beef brisket or top round
- Salt and freshly ground pepper
- 4 cups beef stock or broth
- About 4 cups water, enough to cover the beef
- 2 onions, peeled and quartered
- 4 celery stalks, cut in 1/2
- 1 bay leaf
- 4 carrots, peeled and cut into thirds
- 1 pound small boiling potatoes

- 1/2 cup cake flour
- 1/4 cup all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 Tablespoons milk
- 2 Tablespoons butter
- 1 teaspoon vanilla
- 5 eggs, separated and at room temperature
- 10 Tablespoons sugar
- Pastries:
- ◦2 9-10 inch round sponge cakes
- ◦1 1/2 sticks butter softened
- ◦1/2 -3/4 can condensed milk
- ◦3-4 oz bittersweet or unsweetened chocolate melted and cooled
- ◦1/4 teaspoon salt
