Buddy's Sno Ball Filling

- pound package powdered sugar
- 1 7 ounce jar marshmallow cream
- 1/4 cup softened butter
- 1 teaspoon vanilla extract
- 2 tablespoons milk 2 cups shredded coconut
- 2 to 3 drops red food coloring

Sift flour again, with sugar, baking powder and salt
- 1 cup sifted all-purpose flour
- 1/3 cup granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 eggs
- 1/2 cup whole milk
- 1 teaspoon vegetable oil, plus more for frying
- 1/2 teaspoon vanilla
- 1 teaspoon grated lemon zest
- 3 apples (we used Braeburn), peeled, cored and diced very small (1/8 inch)
- Powered sugar

- 3/4 cup unsalted butter, at room temperature
- 1 1/2 cups sugar
- 5 large eggs, at room temperature
- 2 1/2 cups cake and pastry flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup 2% milk, at room temperature
- 1 tablespoon vanilla extract
- Fluffy Frosting:
- 3/4 cup unsalted butter, at room temperature
- cup 4-6 cups of icing sugar, sifted
- 6 tablespoons 2% milk
- 1 1/2 teaspoons vanilla extract

Creamy Dill Ranch Dressing

1. With the food processor running, add shallot through the feed tube and process until finely chopped
- 1 small shallot, peeled
- 3/4 cup nonfat cottage cheese
- 1/4 cup reduced-fat mayonnaise
- 2 tablespoons buttermilk powder, (see Note)
- 2 tablespoons white-wine vinegar
- 1/4 cup nonfat milk
- 1 tablespoon fresh dill, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground pepper

- To serve:
- 1 large eggplant, about 1 ½ lbs, cut into ½ inch thick slices
- 2 tbsp olive oil
- 1 egg, lightly beaten
- 2 garlic cloves, crushed
- 4 tbsp chopped fresh parsley
- 2 ¼ cups fresh white bread crumbs
- 1 cup grated Parmesan cheese (generous cup)
- 1 cup feta cheese, crumbled (generous)
- 3 tbsp flour
- oil for shallow frying
- salt and freshly ground black pepper
- Plain yogurt, flavoured with fried red chilies and cumin seeds
