- 3 large eggs, separated
- 300 g (1 1/3 cup) caster (superfine granules) sugar
- 500 g (1.1 pounds) almond flour, whole blanched, very finely ground
- Confectioners’ sugar, for rolling
- Silver dragées, for decorating
