Mini Apple Pies

Preheat oven to 425 degrees
- 1 refrigerated pie pastry
- 2 medium Granny Smith apples
- 2 tsp lemon juice
- 1/4 cup firmly packed brown sugar
- 1 tsp cinnamon
- 1/4 tsp ground ginger
- 1/8 tsp nutmeg
- 2 tbs butter, cut into 8 pieces
- 1 egg, lightly beaten
- 1 - 2 tbs granulated sugar
Christmas Cranberry Salad

In a small bowl, dissolve gelatin in 1 cup boiling water
- 2 packages (3 ounces each) raspberry gelatin
- 2 cups boiling water, divided
- 1 can (14 ounces) whole-berry cranberry sauce
- 2 tablespoons lemon juice
- 1 cup heavy whipping cream
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup chopped pecans

1. Combine all ingredients except chili sauce and form into tiny meatballs and bake at 375 degrees for 10 minutes

- 2 pkg (5.9 oz each) Vanilla or French Vanilla instant pudding mix
- 1 can (20 oz) cherry pie filling
- 1 can (20 oz) crushed pineapple
- 1 tub (16 oz) Cool Whip, thawed

1. Combine flour, cream cheese and margarine; mix until dough forms
- 1 1/2 cups flour
- 1 package cream cheese (3 oz)
- 1/2 cup margarine, softened
- 1/4 cup chili sauce
- 1 can corned beef hash (15 oz)
- 1/4 cup green pepper, chopped
- 1 teaspoon chili powder
- 1/2 teaspoon instant minced onion
- 1 cup cheddar cheese

Heat oil for frying in large skillet over medium-low heat
- Oil for frying
- 1 cup self-rising flour
- 1 cup self-rising cornmeal*
- 3/4 cup buttermilk
- 2 eggs
- 1/3 cup + 1 tbs water
- 1/4 cup oil or bacon fat
- No self-rising cornmeal? Used 3/4 cup + 3 tbs regular cornmeal, 1 tbs baking powder and 1/2 tsp salt instead.
