Makes 2 to 3 cups Finely chop the onion and place it in a small bowl
- 1/4 whole onion (1/2 cup finely diced)
- 1 garlic clove
- 1 lime
- 1/2 teaspoon salt
- 1 to 2 jalapeño peppers (1 1/2 to 2 tablespoons minced)
- 4 to 6 plum tomatoes (2 cups medium-diced tomatoes)
- 1/2 About 1/2 bunch cilantro (1/2 cup chopped)

- Small bowl
- Microplane or garlic press
- Citrus juicer
Tex-Mex Vegetable Soup

Mix all ingredients except cheese and sour cream in 4-quart Dutch oven
- 1 package (19 oz) Green Giant® frozen broccoli and carrots in a garlic herb sauce
- 1 jar (16 oz) Old El Paso® thick-and-chunky salsa (2 cups)
- 1 can (15 oz) Progresso® black beans, rinsed and drained
- 1 can (2 1/4 oz) sliced ripe olives, drained
- 2 cups water
- 1 teaspoon chili powder
- 1 cup shredded Cheddar or Monterey Jack cheese (4 oz)
- Sour cream, if desired

- Pinch dried chile flakes
- 4 cups chicken or vegetable stock
- 2 ears ripe corn, kernels sliced off (or 2 cups frozen corn)
- 1 cup fresh or frozen peas
- 6 ounces (1 well-rounded cup) queso fresco, cubed
- 1 cup whole milk
- Salt
