Cream Cheese Truffles

In a large bowl whip the cream cheese, sugar and vanilla until fluffy
- For the Toppings:
- 8 ounces Cream Cheese (softened)
- 8 ounces Semi-Sweet Chocolate Chips (divided)
- 1/3 cup Creamy Peanut Butter (optional)
- 1/4 cup Confectioner's Sugar
- 1 teaspoon Vanilla Extract
- Sprinkles
- crushed Pretzels
- Sea Salt
- crushed Cookies
- crushed Nuts
Pecan Ginger Dip

Mix all ingredients together
- 1/3 cup finely minced green onions
- 1/2 cups finely cut broccoli florets
- 1-8 ounce can water chestnuts, drained and chopped
- 3/4 cup mayonnaise
- 3/4 cup sour cream
- 4 tablespoons (1/4 cup) crystallized ginger, finely chopped
- 1/2 cup finely chopped pecans
- 1/2 teaspoon salt
- 2 tablespoons soy sauce
Three Cheese Stuffed Shells (Meatless)

1 In a large pot bring water to a boil and cook shells according to package directions or until al dente
- 12 12 12 oz jumbo pasta shells
- 1 1/4 1 1/4 1/4 c mozzarella cheese, grated
- 1 1 1 c parmesan cheese, grated
- 2 2 2 lb ricotta cheese
- 4 4 4 large eggs, lightly beaten
- 1/2 1/2 1/2 c fresh spinach, minced & drained
- 1 1 1 tsp black pepper
- 1 1 1 Tbsp dried parsley
- 1 1 1 Tbsp lemon basil, chopped
- 1/2 1/2 1/2 tsp minced garlic
- 16 16 16 oz spaghetti sauce mix with mushrooms
Bruschetta Di Pomodori

- 2 tomatoes, chopped fine
- 6 fresh basil leaves
- 1/4 cup olive oil
- 1 teaspoon balsamic vinegar
- salt 8 -12 slices course country bread
- 2 large garlic cloves
Southern Fried Cabbage

- 5-6 strips of bacon
- 1 head cabbage, sliced
- 1 onion, diced
- 1/4 cup chicken broth (I use low sodium broth)
- 1 tsp vinegar (optional)
- 1/2 tsp salt
- 1/4 tsp pepper
Crispy Southern Fried Chicken

1. In large plastic container, dissolve 2 tablespoons salt in about 2 cups water
- 1 fryer chicken, cut up or your favorite pieces (about 4 to 6 bone-in chicken thighs)
- 1 1/2 to 2 cups milk
- 1 large egg
- 1 to 1 1/2 cups self-rising flour
- 2 tsp onion powder
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 2 tsp chicken soup base
- 2 tsp Paul Prudhomme's poultry magic or other poultry seasoning (optional)

- 1 jar (7-1/2 ounces) marinated artichoke hearts, drained and finely chopped
- 1/4 cup pimiento-stuffed olives, chopped
- 1 can (4-1/4 ounces) chopped ripe olives
- 8 garlic cloves, minced
- 3 tablespoons chopped red onion
- 2 tablespoons minced fresh cilantro
- 2 tablespoons lime juice
- 2 tablespoons Crisco® Olive Oil
- 1 green onion, chopped

Lobster Mac & Cheese

Preheat the oven to 350 degrees F and adjust racks to the middle
- 4 tablespoons butter, plus 1 tablespoon for greasing dish (I used olive oil spray to grease the dish)
- Kosher salt
- 1 pound penne pasta
- 2 small shallots, finely chopped
- 2 cloves garlic, chopped
- Freshly ground black pepper
- 2 tablespoons tomato paste
- 5 tablespoons all-purpose flour
- 1/4 cup white wine (I used about double because the flour mixture soaked it up immediately)
- 4 cups heavy cream
- 1/2 teaspoon sweet paprika
- 1/4 teaspoon cayenne pepper
- 1 bay leaf
- 2 cups shredded sharp white Cheddar
- 2 cups shredded Gruyere
- 2 (8-ounce) raw lobster tails, defrosted if frozen, meat removed from shell, chopped
- 1/4 cup panko bread crumbs
- 1/4 cup freshly chopped parsley leaves (I used dried)
Tiramisu Layer Cake

1. Preheat oven to 350 degrees F (175 degrees C)
- 1box1 box white cake mix and eggs, oil, & water to make according to pkg. i used 2 cake mixes & 2 - 10 inch pans to make layers thicker.
- 2tsp2 tsp instant coffee or expresso powder
- 3/4c3/4 c brewed coffee
- 3Tbsp3 Tbsp coffee liqueur
- FILLING
- 18oz pkg1 - 8oz pkg mascarpone cheese
- 1/2c1/2 c powdered sugar
- 2Tbsp2 Tbsp coffee liqueur
- FROSTING
- 2c2 c heavy cream, cold
- 1/4c1/4 c powdered sugar
- 2Tbsp2 Tbsp coffee liqueur
- GARNISH
- 2Tbsp2 Tbsp cocoa, unsweetened
- 1/2lb1/2 lb bar of semi sweet or dark chocolate,place in ziploc and warm in hands to make nice curls.
