Lemony Chicken Stir-Fry

In a large skillet, heat the olive oil
- 2 Tbsp extra virgin olive oil
- 1/2 onion, finely chopped
- 3 garlic cloves, minced
- 2 lb skinless, boneless chicken breasts or trimmed thighs, cut into 3/4-inch pieces
- 1 Tbsp soy sauce, plus more for seasoning
- 1/4 tsp toasted sesame oil
- kosher salt
- finely ground pepper
- 1 Tbsp plus 1 teaspoon finely grated lemon zest
- 2 Tbsp fresh lemon juice
- steamed rice, for serving
Pineapple Zucchini Bread

Preheat oven to 325 degrees
- 3 eggs
- 2 c. flour
- 2 tsp. vanilla
- 1 c. oil
- 2 c. shredded zucchini
- 3 c. flour
- 1 tsp. baking powder
- 1 tsp. salt
- 1 tsp. baking soda
- 1 c. crushed pineapple (drain it some)
- 1/2 c. raisins
- 1 c. walnuts finely chopped

Pierogi Lasagna

Risotto

1. Risotto Prep - Measure, chop, and gather all of the ingredients going into your risotto
- 1 small onion
- 2-3 cloves garlic, minced
- 2 cups arborio, carnaroli, or vialone nano rice
- 1/2 cup white wine
- 6-8 cups vegetable or chicken stock
- 1-2 tablespoons butter
- 1 cup cheese (Parmesan is classic, but you can use any kind)
- Equipment
- High-sided sauté pan (at least 10" diameter) or dutch oven
- Saucepan
- Spatula
- Ladle or measuring scoop
