Tator Tot & Cheese Bake

Preheat oven to 350° F. Grease a 9" x 9" dish with butter
- 2 tsp. butter
- 2 eggs
- 2 cups milk
- Salt and pepper, to taste
- 2 cups grated yellow cheddar cheese
- 2 cups grated white cheddar cheese
- 1 cup diced ham
- 2-lb. bag tator tots, thawed
Beef Enchilada casserole

Preheat oven to 350. brown meat, onions, chili power and cumin until tender
- 8 ounces lean ground beef
- ½ cup chopped onion
- 1 tsp chili powder
- ½ tsp ground cumin
- 1 15 ounce can pinto beans rinsed and drained
- 1 - 4 ½ - ounce can green chili peppers
- 1 8- ounce carton dairy sour cream or light
- 2 tbsp all purpose flour
- ¼ tsp garlic power
- 8 6 inch corn tortillas
- 1 10- ounce enchilada sauce
- 1-cup shredder cheese
- Chopped tomatoes (optional)
- Preheat oven to 350. brown meat, onions, chili power and cumin until tender.
- Small bowl stir together sour cream, flour,and garlic power; set aside
- In light greased baking dish layer tortillas, meat mixture, sour cream mix ½ can enchilada sauce repeat again top with cheese
