Bacon [dog] Treats

Now there’s actually only two slices of bacon here
- 2 slices bacon, diced
- 1 cup pumpkin puree
- 2 large eggs
- 1 cup old fashioned oats
- 3 cups whole wheat flour, or more, as needed
Refried Bean and Chicken Quesadillas

Stir together refried beans and drained tomatoes in medium bowl
- 1 can (16 oz each) Rosarita® Traditional Refried Beans
- 1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green Chilies, drained
- 6 whole wheat flour tortillas (8 inch)
- 1-1/2 cups chopped cooked chicken
- 1-1/2 cups shredded reduced-fat Cheddar cheese (1-1/2 cups = 6 oz)
- PAM® Original No-Stick Cooking Spray
- Thinly sliced green onions, optional
- Sour cream, optional

- 1 pound chicken (I used frozen breast tenderloins)
- 1 cup dried black beans (or 2 cans, drained and rinsed)
- 4 cups chicken broth
- 1 cup sliced mushrooms
- 1 cup frozen corn
- 1 jar prepared salsa (16 oz)
- 1 1/2 tsp cumin
- 1/2 cup sour cream (to stir in at the end)

Huckleberry Salmon

Preheat grill to medium high
- 1/2 cup apple wood chips (optional)
- 1 1/2 cups fresh huckleberries
- 1/2 cup sugar
- 1/2 cup red wine vinegar
- Pinch salt
- 1 teaspoon whole coriander seeds (optional)
- 1 large shallot, finely minced
- 1 1/2 pound fillet of wild salmon, skin on
- Olive oil, for brushing
- Salt and pepper
- Zest and juice of 1 lemon
- 1 tablespoon fresh thyme, more for garnish
- 1 cup greens, such as arugula, baby kale and watercress
Muffaletta Sandwiches

Whisk the first 3 ingredients in a large bowl to blend
- 1/4 C red wine vinegar
- 2 minced garlic cloves
- 1 t dried oregano
- 1/3 C olive oil
- 10 lg pitted olives chpped
- 1/3 C chpped Kalamata olives
- 1/4 C chpped red bell peppers
- salt and pepper
- 1 lb round bread loaf
- 4 0z thin sliced ham
- 4 oz thin sliced salami
- 4 oz thin sliced provolone
- 1/2 red onion sliced very thin
- 1 1/2 oz arugula leaves
Pineapple Lime Smoothie

Instructions: Add all ingredients to the blender and blend until smooth
- 1 1/4 cups frozen pneapple chunks
- 2 T lime juice
- 1 T fresh mint

Preheat oven to 400 degrees
- All-purpose flour, for dusting
- 1 package (14 ounces) frozen puff pastry, preferably all-butter, thawed
- 8 ounces rhubarb, trimmed and sliced 1/4 inch thick (1 1/2 cups)
- 8 ounces fresh strawberries, hulled and sliced 1/4 inch thick (1 1/2 cups)
- 1/2 cup lavender sugar (see note, above) or granulated sugar
- 1 tablespoon cornstarch
- 1/8 teaspoon coarse salt
- 1 large egg white, lightly beaten
- Coarse sanding sugar
- Whipped cream, for serving
