In a medium bowl, stir together tomatoes, white onion, jalapeno, garlic, and fresh lime juice
- 2 medium tomatoes, roughly chopped (1 1/2 cups)
- 1 small white onion, diced small (2/3 cup)
- 1 jalapeno, minced
- 1 garlic clove, minced
- 1 tablespoon fresh lime juice
- Coarse salt and ground pepper
- 1/2 cup loosely packed fresh cilantro leaves, roughly chopped
Sweet Potato Nachos

Pre-heat your oven to 400 degrees F
- 2 large sweet potatoes
- a few ounces of grated cheese [cheddar, gouda, pepperjack, mex blend, etc...]
- a spoonful or two of your favorite healthy oil [spray or regular]
- chili powder, to taste
- garlic powder, to taste
- a sprinkle or two of cayenne pepper [or paprika!]
- and all your favorite nacho toppings!
- To take the savory-sweet combo a step further, grab some ground cinnamon and sprinkle that over the sweet potatoes
