SPAGHETTI - BAKED

Preheat the oven to 350 degrees F
- 2 cups canned diced tomatoes
- 2 cups tomato sauce
- 1/2 cup diced onion
- 1/2 cup diced green bell pepper
- 2 cloves garlic, chopped
- 1/4 cup chopped fresh parsley
- 1 1/2 teaspoons Italian seasoning
- Kosher salt and freshly ground pepper
- 1/4 teaspoon garlic powder
- 1 1/2 teaspoons seasoned salt
- 1 1/2 teaspoons sugar
- 2 small bay leaves
- 1 1/2 pounds ground beef
- 8 ounces angel hair pasta
- 1 cup grated cheddar cheese
- 1 cup grated monterey jack cheese
KIELBASA AND POTATOES ROASTED

- 5 -7 potatoes, washed and cut up into bite-size chunks (skin on)
- 1 package kielbasa, cut into bite size pieces
- 1 package dry onion soup mix
- 1/4 cup canola oil
CORN AND TOMATO PASTA SALAD

- 1 pound farfalle pasta
- 2/3 cup mustard vinaigrette (see directions)
- 1 small shallot, finely chopped

- 1/2 cup fresh basil, roughly chopped

- 4 large russet potatoes, each about 3/4 pound each, scrubbed and dried
- 2 to 4 tablespoons unsalted butter
- 1/3 cup sour cream
- 1 scallion, finely chopped
